CREAM CHEESE CHICKEN | Serves 4

INGREDIENTS

➡️CHICKEN:
2x 250g/9oz Chicken Breasts, brought close to room temp
1/2 tsp EACH: Smoked Paprika, Salt
1/4 tsp EACH: Garlic Powder, Onion Powder, Dried Oregano, Black Pepper, plus more to serve
1/8 tsp Dried Thyme
1 tbsp EACH: Unsalted Butter, Olive Oil
➡️SAUCE:
2 Shallots, very finely diced
180ml / 3/4 cup Chicken Stock (use low-salt if sensitive to salt)
1x 165g/5.8oz tub of full-fat Cream Cheese, brought close to room temp (I use Philadelphia)
1 tsp Dijon Mustard
finely diced Fresh Chives, to serve

METHOD

1️⃣Horizontally slice each chicken breast right through the centre to create 4 even-sized breasts. Combine the seasoning mix in a small pot or bowl, then evenly sprinkle over both sides of each breast.
2️⃣Place a large pan over medium-high heat and stir in the butter and oil. Add the chicken and fry for a few minutes on each side, or until lightly charred on the outside and piping hot/white through the centre. Remove and place on a plate to one side then lower the heat to medium.
3️⃣Add the shallots and fry in the leftover fat until soft and golden. Pour in the stock, then stir in the cream cheese until it blends into a sauce. You'll need to give it a good whisk to smooth out all the small lumps. Stir in the dijon, then stir in the resting juices from the chicken.
4️⃣The sauce should be relatively thick already, but if it's not just gently simmer for a couple of minutes. If you over thicken it just stir in a splash more stock or water to thin it out.
5️⃣Add the chicken back in and baste in the sauce, then sprinkle with chives and a pinch of black pepper. Serve up and enjoy!

1 lb chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp kosher salt
1/4 tsp fresh ground pepper
4 tbsp butter
1/2 cup freshly grated Parmesan
2 tbsp dried parsley
Dash of Franks Red Hot
5 cloves minced garlic

1. Butterfly chicken breast and slice into three slices per half. Coats in olive oil add in seasonings and mix with hands.
2. Preheat oven to 450°.
3. Baked chicken for seven minutes.
4. Remove chicken from oven, baste, flip and baste other side.
5. Cook for seven more minutes. Based rest of garlic Parmesan butter sauce.
6. Broil for a couple minutes till golden brown.
7. Serve with your favorite pasta and veggies.
20 Minute F*k Me Chicken-
Ingredients:
- 2 chicken breasts, sliced into cutlets
- 50g butter
- 1 tbsp olive oil
- 1 cup flour
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried Basil
- 2 tsp onion powder
- 1 tbsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
- 3 cloves garlic, minced
- 1 tsp chilli flakes
- 1.5 cups chicken stock
- 1 cup thickened cream
- 1/2 cup chopped parsley
- 1/4 cup chopped Basil, fresh
- 250g dried penne
- 1/2 cup grated Parmesan
1. Add flour, black pepper, salt, paprika, garlic powder and half the onion powder in a bowl, whisking to combine.
2. Coat chicken cutlets on both sides with the flour mixture and set aside
3. Heat up a large saucepan on medium and add butter and olive oil, allowing to heat for 1 minute before adding the chicken breast. Allow to fully cook through on both sides and get a nice golden crust. Remove from the pan and set aside. Cook chicken in batches to not overcrowd the pan
4. Drain excess fat from the pan and sauté garlic and chilli flakes for 30 seconds before adding chicken stock and cream. Stir to combine before adding oregano, thyme, dried basil and remaining onion powder
5. Bring to a simmer and cook for 12-15 mins, adding chicken back into the sauce in the last 5 mins, flipping over to coat in the cream sauce
6. Cook pasta in heavily seasoned, boiling water until al dente, remove chicken from the pan and finish cooking pasta in the sauce.
7. Toss through Parmesan cheese, chopped parsley and basil
8. Serve 💅

➡️ Recipe: Sesame Chicken
Serves 4-5

* 2 lbs chicken thigh, boneless and skinless, cut into 1 inch cubes
* 2 tbsp toasted sesame seeds
* 1 1/2 tbsp sesame oil
* 4 cups frying oil, peanut or canola oil

Batter—
* 3/4 cup water
* 1/2 cup all-purpose flour
* 1/3 cup cornstarch
* 1 tbsp baking powder
* 1 tsp kosher salt
* 1 tsp garlic powder

Sauce—
* 3 tbsp rice vinegar
* 2 1/2 tbsp soy sauce
* 2 tbsp honey
* 2 tbsp ketchup
* 2 tbsp shaoxing wine
* Optional: 1/2 tbsp chili flakes or to taste

1. In a large bowl, combine water, AP flour, cornstarch, baking powder, kosher salt, garlic powder along with the chicken. Mix well until everything is combined and the batter is smooth. The consistency should be a very watery pancake batter. Set aside and marinate for at least 2 hours. This can also be stored in the fridge overnight before frying.
2. To make the sauce combine rice vinegar, soy sauce, honey, ketchup, shaoxing wine and chili flakes (if wanted otherwise omit). Mix well and set aside.
3. Preheat a wok or large pot with frying oil to 350F. Once oil is ready, mix the batter again to ensure the batter coats the chicken well. Fry chicken in small batches to ensure there is no overcrowding. Cook for 5-6 minutes or until the chicken is a deep golden brown and cooked through. Strain and work on the next batches until all the chicken is cooked through. Set aside.
4. In a large pan or wok, bring the sauce to a simmer. Simmer on medium low heat for 3-4 mins to reduce the sauce. Should reduce by almost 1/4. Sauce should be sticky and glossy.
5. Add sesame oil in the sauce and mix well. Add all of the fried chicken and toss in the sauce until evenly coated.
6. Sprinkle sesame seeds on top of the chicken then toss one last time. Serve with rice and enjoy!
