A gorgeous dinner for two that comes together quicker than you’d think! Hope you love this one ❤️ Chris x STEAK & CREAMY GARLIC MUSHROOM ORZO | Serves 2 *Recipe on the blog in more detail INGREDIENTS ➡️STEAK: 1x 285g/10z Ribeye Steak, at room temp 1 tbsp Veg Oil 1 heaped tbsp Unsalted Butter (~25g) 2 large cloves of Garlic, left in skins and lightly smashed with the side of your knife 2-3 sprigs of Fresh Thyme 100g / 3.5oz Fine Asparagus, woody ends removed (optional) ➡️ORZO: 1 cup / 200g uncooked Orzo 200g / 7oz Button Mushrooms, thinly sliced 2 large cloves of Garlic, finely diced 180ml / 3/4 cup Double/Heavy Cream (leave at room temp) 120ml / 1/2 cup Chicken Stock 30g / 1/3 cup freshly grated Parmesan, plus more to serve if desired 1 tbsp finely diced Fresh Parsley, plus more to serve if desired 1 tbsp finely diced Fresh Chives Salt & Black Pepper, as needed METHOD 1️⃣Optional: Add a large cast-iron/heavy-based pan over medium-high heat with a splash of oil. Add the asparagus and fry until it begins to soften and lightly char. Season with a pinch of salt and pepper, then remove and wipe out the pan if needed. Turn the heat to high. 2️⃣Pat the steak dry then generously season both sides with salt and pepper. Once the pan is piping hot (you may see wisps of smoke) add the oil and leave for 5-10 seconds. Add the steak and cook for around 2 minutes and 30 seconds, then flip and cook for another 1 minute and 30 seconds. Add the butter, thyme and whole garlic cloves and baste the steak for 1 further minute. Remove and place to one side, leaving the excess fat behind. Lower the temp slightly to medium-high. 3️⃣At this point add the orzo to salted boiling and cook until al dente (give it a good stir as it's prone to sticking). I recommend taking a couple of mins off the packet time so it can finish cooking in the sauce. Drain when needed, retaining a cup of the starchy pasta water. 4️⃣Add the mushrooms to the leftover fat in the pan and fry until they soften and build up a golden crust. Add the diced garlic and fry for 20 seconds or so (careful it doesn't burn). Lower the heat to medium then stir in the stock, cream, parmesan, chives and parsley. Simmer and stir for a few mins until the sauce begins to thicken. 5️⃣Add the drained orzo alongside a splash of starchy water and the resting juices from the steak. Simmer and stir until the sauce goes nice and thick and clings to the orzo. If the sauce dries out before the orzo cooks just stir through some more starchy water (discard any unused) and simmer a little longer. Check for seasoning and adjust with salt and pepper if needed. 6️⃣Very thinly slice the steak with your knife at an angle and against the natural grain of the meat. Top the orzo with the steak and asparagus (if using), finish with parmesan and parsley if desired then serve and enjoy! *My steak was a little over 2cm thick and found 2 min 30 secs each side ended with it being medium-rare. Just use your best judgment to cook the steak to your liking based on its weight and thickness.

I loveeeee frosted sugar cookies and these are extra cute because they have pink sprinkles💖☺️ Ingredients Cookie Dough - 3/4 cup unsalted butter, melted - 1/2 cup granulated sugar - 1/2 cup powdered sugar - 2 tsps vanilla - 1 tsp cake batter extract - 1 large egg - 1 egg yolk - 2 1/2 cups all-purpose flour - 1 1/2 tsps baking powder - 1/2 tsp baking soda - 1/4 tsp salt - 1/4 cup sprinkles Cream Cheese Frosting - 1/4 cup unsalted butter, room temp - 4 oz cream cheese, room temp - 1/2 tsps vanilla extract - 1/2 tsp cake batter extract - 1 1/2 cups powdered sugar - 1-2 tbsps milk Directions - Preheat oven to 350 F. Line a baking tray with parchment paper. Set aside. - In a large bowl, whisk together the melted butter and BOTH sugars. - Add the egg, egg yolk, and extracts. Whisk until combined. - Add baking powder, baking soda and salt. Stir until combined.  - Add the all-purpose flour, 1/2 cup at a time and mix until flour is almost incorporated. Add in the sprinkles and fold until just combined. - Scoop the cookie dough and place onto the prepared pan with couple inches in between each dough ball. Slightly flatten each dough ball. - Bake for 11-13 minutes until the edges are slightly golden brown and the center no longer looks wet. - After removing from oven, allow the cookies to cool in the pan before transferring to a wire rack. To make frosting: - In a large bowl, beat the unsalted butter and cream cheese until light and creamy. - Add in the powdered sugar. Beat until creamy. Add in milk 1/2 tbsp at a time until you reach your desired consistency. - Pipe or spread frosting on top of the cooled cookies! - Store in an airtight container in the refrigerator for 3-4 days. #baking #bakingszn #bakingrecipe #cookiesoftiktok #sugarcookies

Inspired by the new grilled cheese Taco Bell burrito, I couldn’t resist creating a gourmet version of my own. Who says gourmet food has to be complicated? Here’s what you’ll need: **Taco meat:** 3 pounds of ground beef or chicken, plus 2 packets of taco seasoning. **Potatoes:** 1 bag of tater tots. **Cheese:** 1 pound of Mexican cheese, 8 ounces of mild cheddar, and 8 ounces of cream cheese. **Sauce:** 16 ounces of sour cream, 1 teaspoon of taco spice, and 1 teaspoon of ranch powder. **Melted butter:** 1/2 stick. - **10 Flour tortillas. - **nonstick Oil spray Preheat your oven to 425 degrees Fahrenheit. Start by baking tater tots in the oven. While they’re baking, brown ground beef with taco seasoning. Then, prepare to roll the burritos. In a separate bowl, mix together the ingredients for your sauce. In a 12 x 9” deep baking tray, spray with nonstick spray. Add cheddar cheese to the tray and set aside. Lay the tortillas on the table. Add about one to two tablespoons of cream cheese, the desired amount of Mexican cheese, ground beef, and fully cooked tater tots or potato squares (as an alternative). In my opinion, it’s best to wait until after baking the burritos to add the dipping sauce. Roll the burritos and place them directly over the cheese in the tray. Once you’ve completed the rolling process, brush the burritos with butter and sprinkle more cheese. Then, place them in the oven with an aluminum foil tent over the top, but don’t seal the foil. We’re just reducing the browning of the cheese. Bake the burritos for 10 minutes without the foil. To brown the cheese, place them under the broiler for about 60 seconds, but keep a close eye on them to avoid burning. They’ll cook very quickly.
