That’s why recipe 27 in my Latin Heritage Month series is the perfect alternative—Chicharrón de Pollo! I’ve recreated the flavors of Mexican pork chicharrón using chicken, and it turned out SO good! My recipe says 2-3 servings, but honestly, you might just eat it all in one go. The key is not to overcook the chicken—boil just until done and fry until golden and crispy on the outside while keeping it juicy inside. These are so bomb with lime juice, hot sauce, and guacamole. Full recipe details are listed below - like + save this post to make later! __ Chicharrón de Pollo 2-3 servings 35 minutes 1 lb chicken breast, cut into large chunks 1 tbsp peppercorn 1 1/2 tbsp salt 2 bay leaves 3-4 garlic cloves 1/2 white onion 3-5 cups high-heat frying oil — Start by placing chicken breast chunks in a large pot and add the peppercorns, salt, bay leaves, garlic cloves, and white onion. Cover the chicken with water and bring this to a boil. Cook until the chicken is just cooked through, about 15-20 minutes, then drain and let it cool. In a large skillet or deep fryer, heat 3-5 cups of high-heat frying oil over medium-high heat. Fry the chicken chunks in batches for about 4 minutes, or until golden brown and crispy. Be careful not to overcook them, as this can dry out the chicken. Once fried, remove the chicken from the oil and place it on a plate lined with paper towels to drain any excess oil. Repeat until all the chicken is fried. While still warm, season with additional salt to taste. Enjoy the chicharrón de pollo with a squeeze of lime and your favorite hot sauce, or serve it as you would with pork chicharrón. Chorizo potato croquettes aka little addicting flavor bombs 🤤 Ingredients: 🥩1 2 oz. pack Campo Grande Sliced Chorizo, chopped 🥔4 potatoes, cut into small cubes 🌱3 Tablespoons fresh parsley, chopped 🧄1 Tablespoon garlic powder 🧅1 Tablespoon onion powder 🥄2 Tablespoons extra-virgin olive oil 🧀8 mini mozzarella balls or teaspoon-sized cubes 🥄4 Tablespoons flour 🥚2 eggs 🍞100g (4 oz.) panko breadcrumbs 🧂Salt & Black pepper 🌻Neutral oil for frying (sunflower, grapeseed, vegetable) preparation: 1. Place potatoes in a large pot and cover with water. Boil until soft. 2. Drain the water and place potatoes in a large bowl with the parsley, garlic powder, onion powder, olive oil, salt, and pepper. Mix using a fork or potato masher until you reach a smooth mashed potato consistency. 3. Rub your hands with oil to keep the mixture from sticking as you form the croquetas. Grab a soup spoon and scoop a big dollop of potato into the spoon. Place a mozzarella ball in the center, along with a little bit of chorizo, and wrap the potato around the filling so it completely covers the cheese. 4. Whisk eggs in a small bowl and set aside. Place flour and panko and separate bowls. First, coat the croqueta in the flour, then the egg, and end with the panko. Repeat with all the croquetas. 5. Heat enough oil in a cast iron skillet to cover the croquetas. Fry the croquetas until they’re golden brown. 6. Remove from the frying pan and place on a paper towel-lined plate. Add some smokey poblanos and chicken to your Annie's Home Grown shells n cheese tonight for a quick and flavorful dinner. 🌶️ Our amiga Sarita made this look so easy, so make sure to tag us if you try it out. #chilepoblano #quickmeal #macncheeserecipe Annie’s Shells n Cheese with Chicken & Poblanos 1 Package Annies Shells & White Cheddar 1 chicken breast, cubed 1 poblano, diced (or jalapeño) 2 garlic cloves, minced 1 Tbsp oil S&P 4 Tbsp milk 3 Tbsp unsalted butter 1/4 c breadcrumbs 4oz parmesan cheese Avocado Oil Spray Method: In a small bowl, combine breadcrumbs and shredded parmesan cheese. In a small stock pan heat oil for a few minutes, when ready add cubed chicken. When chicken is brown on all edges remove and set aside. In a similar deep stock pan boil water and cook Annie's shells per instructions on package plus the extra milk & butter ( milk and butter already accounted for in above recipe). After Annie’s shells are cooked and drained, add into milk mixture. Add chicken sautéed in poblanos and garlic and combine with the shells and cheese sauce. When poblano chicken has been combined with Annies shells place into a baking dish of choice. Top chicken Mac and cheese with parmesan breadcrumbs. Coat breadcrumbs with avocado oil spray and bake at 400 degrees until golden brown- this will vary depending on your oven and pan size- around 5-10 minutes.
