Recipe 1 stick, butter, softened 1/3 cup white sugar 2 tablespoons brown sugar 1 egg 1 teaspoon vanilla extract 1 1/2 cups all purpose flour 1 teaspoon baking powder 1/4 teaspoon salt Butter sauce 2 tablespoons butter 1/4 cup powdered sugar 2 teaspoons water 1/4 teaspoon vanilla extract Cream together, softened butter, and sugars. Add egg and vanilla extract continue mixing. Add dry ingredients and mix only until combined. Do not over mix. Roll balls 2 tablespoon size each. (2.25 ounce) pat down slightly to resemble hockey puck. Bake at 350° for 10 to 11 minutes. While cookies are baking prepare butter sauce. Melt 2 tablespoons of butter add in powdered sugar, water and vanilla stirring continuously. Stir until powdered sugar is dissolved. Do not bring to boil. Remove from heat and let set for five minutes. When cookies are out of oven. Let cool slightly and top with butter sauce. Once they have cooled completely, sprinkle with powdered sugar. This recipe only makes six cookies. Therefore I would recommend doubling or tripling. They are that good. I always buy these when I visit my local bakery especially when I am younger 😄 However, with most of these older bakers retiring, there are less stores selling these and I thought to make these old school butter cookies myself to re-live that childhood nostalgia. It's really worth every effort and I hope you will like these too 👍🏻 Recipe (cup measurements and more recipes available in profile / blog too) - 115g of Butter, Softened at Room Temp - 45g of Icing Sugar -5ml of Vanilla Essence - 140g of Plain Flour - Approx 100g of Jam of choice (smooth if possible) Instructions 1. Firstly, cream together the butter and icing sugar until light and fluffy, approx 2 minutes 2. Then, whisk in the vanilla 3. Fold in the flour until a dough is formed. Refrigerate for 5 - 10 minutes to harden, in the meanwhile, pre-heat oven to 160C 4. Next, transfer the dough to a piping bag with a desired tip and pipe on a baking tray lined with parchment paper 5.
