🍝A is for Amatriciana🍝

This dish is over 1000 years old, but the recipe has changed slightly over the years. It was originally made without tomatoes and resembled the modern day “Gricia” sauce. Once tomatoes arrived in Italy around the 1600s, they made their way up from Naples and into this dish forever.

The red pepper is optional (you can just use black pepper instead for a bit milder version), but I strongly prefer the little hint of spice you get from a fresh pepperoncino.

This whole dish comes together in the time it takes to boil spaghetti, so it's a perfect weeknight meal.

Recipe 1 serving:
-125 g (4,4 oz) of guanciale
80 g (½ cup) Tomato Puree
1 chili pepper (2g or ½ tsp Red Pepper Flakes)
100 g (3oz) of spaghetti(or bucatini)
20 g (3Tbsp) of grated Pecorino Romano

-Starting in a cold pan, brown the guanciale on low
-Add the tomatoes and chili while the pasta boils.
-Cut the heat to your pan, and then toss the pasta with the sauce and some pasta water.
-Once decently coated, add a sprinkle of freshly grated pecorino Romano and toss till smooth and creamy.
-Top with some more pecorino and enjoy.

RECETA
Ingredinetes:
🌾400gr pasta
🧅2u cebolla
🥫300gr salsa de tomate
🥓150gr guanciale
🥩200gr butifarra o salchicha
🥚1u huevo entero
🥚3u yemas
🧀100gr parmesano o pecorino
🫒Aceite de oliva virgen extra
🧂Sal y pimienta

ELABORACIÓN
1️⃣Corta el guanciale a tiras y desmenuza la butifarra
2️⃣En una sartén añade el guanciale y seguidamente añade la butifarra, cocina hasta que esté todo bien dorado y reserva
3️⃣En la misma sartén añade la cebolla previamente picada y deja cocinar 20 minutos
4️⃣Incorpora el tomate triturado, mezcla bien y deja cocinar a fuego lento durante unos 10 minutos
5️⃣Añade de nuevo el guanciale y la butifarra al sofrito y mezcla bien
6️⃣Pon a hervir la pasta hasta que esté al dente
7️⃣Mientras en un bol grande, bate las yemas de huevo con el queso parmesano rallado hasta obtener una mezcla homogénea, reserva
8️⃣Escurre la pasta reservando un poco del agua de cocción, añade la pasta a la sartén con la salsa y mezcla bien para que se impregne de los sabores
9️⃣Retira la sartén del fuego y añade la mezcla de yemas y parmesano
🔟Mezcla rápidamente para que las yemas no se cuajen y la salsa quede cremosa. Si es necesario, añade un poco del agua de cocción de la pasta para ajustar la consistencia
*️⃣Último paso, emplata y añade más queso parmesano por encima y a disfrutar🤤
