CRISPY CHICKEN MAC & CHEESE 🧀🍝 This was honestly so good! It really took no time at all to make! Save for later☝🏼 •542 kcals per portion •53g PRO, 57g CHO, 14g FAT Serves 2: -2 x 100g of uncooked chicken breasts -Salt/pepper -1 egg -30g of panko breadcrumbs -1 tsp of paprika -1 tsp of garlic powder -Oil spray -100g of uncooked macaroni -200ml of low fat milk -30g of light cream cheese -1 tsp of mustard -10g of mozzarella -40g of cheddar cheese Per portion: -1 tsp of parmesan, grated -Fresh parsley, chopped Method: 1. Season the chicken breasts with salt and pepper. Cover with baking paper and beat down until flat. Dip into the egg. 2. Mix the panko breadcrumbs with paprika and garlic power. Coat the chicken in this. Spray with oil and air fry at 180C for 20 minutes until cooked. 3. Cook the macaroni for 8-10 minutes until al dente. Drain and keep pasta water. 4. Pour milk into a pan on medium heat. Let it simmer and then add the cream cheese, mustard and salt/pepper. Whisk and keep simmering until it thickens up. Pour in 100ml of pasta water. Stir and let it thicken up again. 5. Mix in the macaroni along with a little more pasta water and mozzarella once the sauce is thickened. 6. Sprinkle over the cheddar cheese. Place under the grill for 5-8 minutes until bubbling and browned. 7. Divide into 2 portions. Slice the chicken breasts and place on top of the mac n cheese. Garnish with some Parmesan and parsley. High Protein Honey Garlic Butter Chicken Mac n Cheese!🍗🍯🧀 Absolutely one of the best combos, so indulgent, bursting with flavour and packed with 60g of protein! Macros Per Serving (4 Total) 597 Calories | 59g Protein | 52g Carbs | 16g Fat Ingredients (Makes 4) Honey Garlic Chicken - 800g Raw Chicken Breast cut into cubes - 1.5 Tsp Salt - 1 Tsp Black Pepper - 1 Tsp Chilli Flakes (leave it out if you don’t want it spicy) - 1.5 Tsp Garlic Powder - 1.5 Tsp Onion Powder - 1.5 Tep Paprika or Smoked Paprika - 2 Tsp Olive Oil - 30g Light Butter (Brand: Lurpak) for cooking + extra once cooked - 2 Tsp Minced Garlic - 30g Honey (15g Honey per batch of chicken) - Handful Fresh Chopped Parsley Get a pan on medium heat first then add butter. Let it melt then add your chicken (don’t overcrowd the pan). Cook for 4-5 mins on one side first till you get a nice golden brown crust. Then cook the other side for 3-4 mins more. Lower the heat completely when adding the extra butter, garlic and honey. Mix till well coated and sticky then set aside Garlic Mac n Cheese - Big Tbsp Minced Garlic - 300ml Skimmed Milk - 160g Light Cream Cheese (Brand: Philadelphia) - 1 Tsp Salt or to taste - 1/2 Tsp Black Pepper - 1 Tsp Smoked Paprika - 1/2 Tsp Nutmeg (adds a great deep flavour!) - 100g Low Fat Cheddar Cheese (You can use any low fat cheese you have available) - 220g Uncooked Macaroni Pasta or any pasta of your choice On medium low heat cook the minced garlic in the residue butter of the chicken for 2 mins till fragrant. Then add milk, cream cheese, spices. Mix this till completely smooth then lower the heat before adding the cheddar cheese.
