¡2023-7-22Apple Fritter Focaccia! This has been my most requested recipe and I think it might be my favorite sweet focaccia yet! RECIPE For the Apple filling/topping 6 tbsp butter 3 red apples, chopped into small pieces 1 cup chopped walnuts 3/4 cups white sugar 2 tbsp cinnamon 1 tsp vanilla extract Juice of 1/2 lemon 1 tbsp corn starch mixed with 1 1/2 tbsp water For focaccia dough 740 grams all purpose flour A pinch of salt 12 grams sugar 2 packets rapid rise instant yeast 540 g warm water 3 tbsp melted butter for the pan For icing 1 cup powdered sugar 1/2 tsp vanilla extract or lemon extract 1-2 tbsp of milk or lemon juice (add and mix until you get desired icing consistency) First make your filling but chopping your apples and melting your 6 tbsp of butter in a deep cast iron or skillet. Add the apples to the melted butter, then add your sugar, cinnamon, vanilla, and lemon juice and cook on medium for 6 minutes until softened. Add your walnuts and corn starch slurry (the corn starch water mixture) and cook until it has thickened then remove it from the heat to cool. For the dough, mix all the dough ingredients together in a stand mixer (or by hand in a a bowl), and kneed for about 5-10 minutes until dough comes together and is smooth. You donât need to bloom the yeast if you are using instant yeast but if you are using another kind, bloom it first in the warm water until it becomes frothy (about 5 minutes) before mixing in the dry ingredients. Preheat the oven to 400, then dimple the dough all over with your fingers before adding the rest of the filling to cover the top. It has a zesty lemon glaze, fresh blueberry compote and a delicious streusel crumble! Recipe For focaccia dough 740 grams all purpose flour A pinch of salt 12 grams sugar 2 packets rapid rise instant yeast 540 g warm water For blueberry compote 3 cups blueberries Juice of 1 lemon 1 tbsp water 3/4 cup white sugar 1 tsp vanilla extract Cornstarch slurry (1 tbsp corn starch + 1 1/2 tbsp water mixed together) For crumble 2/3 cup flour 2/3 cup sugar 1/4 cup melted butter For icing 1 cup powdered sugar Zest of 1 lemon Juice of 1/2 lemon or more if you want a thinner consistency 3 tbsp melted butter for the pan First make your blueberry compote by combining blueberries, lemon juice, water, vanilla, and sugar in a skillet and cook on medium for 5 minutes until the berries have released their juice and the mixture is bubbling. Mix your corn starch and water then pour them into the blueberry mixture and cook for another couple minutes until thickened. Remove it from the heat and allow it to cool. For the dough, mix all the dough ingredients together in a stand mixer (or by hand in a a bowl), and kneed for about 5-10 minutes until dough comes together and is smooth. If it isnât as crumbly as you want, add a little more butter. Sprinkle the crumble over the top, then bake for 25-35 minutes or until the edges are nice and golden. Optional to add about Ÿ cup of heavy cream to create a quick blush sauce. Spoon a layer of the sauce in a 9x13 pan or a pan of choice. To make the cheese mixture, mix ricotta, mozzarella, minced garlic, grated parmesan, spinach, egg, oregano, basil, nutmeg, black pepper, salt and lemon zest. Spoon the cheese mixture in the shell making sure to not over stuff. Layer them in the pan. Spoon more sauce on top covering the shells. Sprinkle more cheese on top. Cover with parchment. Meanwhile, melt your 2 sticks of butter in a sautĂŠ pan, then add your brown sugar, vanilla, and cinnamon, and continue to cook for a couple minutes on medium heat, mixing well until itâs all combined. Turn out your dough onto the sheet pan, then stretch it out carefully so it covers the entire surface before pouring half of the sugar mixture over the top. ¡2024-8-9Brown Butter Cinnamon Roll Focaccia đŤ If youâve been here a while youâll know I shared my original cinnamon roll focaccia recipe a few years ago. So many of you absolutely love it, and so do I⌠BUTâŚ.!! I couldnât stop thinking about a gooey brown butter version of itâŚand I wanted to glaze it like I glaze my jam donut focaccia instead of the cream cheese icing drizzle on the OG version. The result is otherworldly DELICIOUS!!! You could of course top this one with a cream cheese icing if youâd prefer⌠To make it: Prepare a batch of same-day focaccia dough (recipe/tutorial is pinned to the top left corner of my grid). Follow the recipe instructions up until itâs time to tip the dough into the tray. While the dough is proofing, make the cinnamon filling. Cinnamon Filling: 1/2 cup (115g) salted butter, browned* 1/2 cup (100g) light brown sugar 1.5 Tablespoons ground cinnamon 1/4 teaspoon vanilla extract *You can use butter without browning it first but youâll get more complex caramel notes in the filling if you brown the butter - worth the extra effort. If youâve never browned butter before, you essentially want to melt it down over a medium high heat and then simmer it, stirring every 30 seconds or so to ensure the butter isnât sticking/burning on the base of the pan. Youâll hear the bubbles from the butter sizzle as the water evaporates off of it but suddenly the butter will go quiet and start foaming up. Once this happens, look at the colour of the foamâŚyouâll start to notice lightly browned specks in the butter. Give the butter another good stir and remove from the heat. The butter should be a lovely golden brown (not dark brown - be careful as it can burn quickly!)⌠Mix the browned butter with the brown sugar, cinnamon and vanilla. Set aside. When the dough has finished proofing, line the parchment on the tray with 2 tbsp melted salted butter instead of olive oil. Transfer the dough to the tray (9x13 inch) and gently stretch the dough to edges. Spread half of the filling over the dough and fold up as seen in this video. Flip the dough over and cover to finish proofing at room temp for 1-1.5 hours. Preheat oven to 215C/420F, place rack in lowest position. Youâll need to warm up the cinnamon sugar butter to make it drizzling consistency again (it hardens as it cools). Spread over the top of dough evenly and dimple in. Bake for 18-23 minutes. While it bakes, whisk up the glaze: 125g (1 cup) powdered sugar 2-3 Tbsp milk Dash vanilla extract Sprinkle of cinnamon Drizzle over the focaccia once itâs out of oven, brush on top, sides and bottom (I do this by rubbing the bottom in tray thatâs been brushed with the glaze).
