·4d ago Replying to @Sydney <3 why rice flour??👇 1. It’s gluten free so it doesn’t absorb into your boule while it’s in its banneton or bowl+towel. 2. On top it is what gives us that pretty white look especially for designs. 3. NO, it is not NEEDED it’s just better, but you can still use your regular flour to line your bowl and help keep it from sticking! ·2-19Sourdough starter maintenance! Key points👇 ✨I prefer keeping my starter in the fridge when not in use. Give it a regular feeding, let it double in size, screw lid on tight stick in fridge. Easy peasy! ✨when ready to bake take starter out. Let it get to room temp, discard feed, and wait for peak/ just after peak to mix your dough🩷 ✨on counter feed twice a day typically 12 hours apart if feeding a 1:1:1 ratio. Feed closer to 1:3:3 or 1:4:4 if feeding once a day. (My preference if I’m leaving it on the counter) ✨high ratio feeding will help your hungry starter, don’t be afraid of it! Even if just starting with a 1:2:2 ratio! ·2024-12-22🤍Signs i look for when determining if my bulk fermentation is done🤍 more tips👇 -these are all signs i look for when determining if my bulk fermentation is complete -this plus checking dough temp should get you pretty close to proper fermentation. -your dough should have a domed appearance and the edges are pulling away. -for beginners, use a glass bowl so you can visualize the bubbles -bulk fermentation can last anywhere from 2-24 hours. Be patient with yourself and your dough! Bulk fermentation is definitely the hardest part to get right. -most importantly have fun and dont take it too seriously! Keep trying and experimenting.
