welcome to season 2, episode 2 of my sandwich series. today i’m paying homage to er*whon with this sushi sandwich 🍣 beautiful, crunchy, and packed with flavor. you all have to try! here’s the recipe:
sushi rice
2 cups sushi rice
3 tbls rice wine vinegar
3 tbls sugar
1 1/2 tsps kosher salt
ahi tuna:
1/2 pound sushi grade ahi tuna, minced
2 tsps soy sauce
1 tbls kewpie mayo
1 teaspoon sriracha
1/2 sliced green onion
1/2 pound sushi grade salmon, thinly sliced
nori sheets
avocado, thinly sliced
sesame seeds
cook sushi rice in rice cooker, according to package. in a small pot, combine vinegar, sugar and salt. cook until sugar has dissolved. pour into rice and mix. press rice into a 1/8 baking sheet until 1/4-inch thick. cover with plastic wrap. transfer to freezer until frozen. trim off slices and fry in neutral oil until golden brown.
mix together ahi tuna, soy sauce, mayo, sriracha, green onion.
build the sandwich by adding a few sheets of nori, cucumber, salmon, more nori, spicy tuna, avocado, sesame seeds and slice.
