Green goddess pasta!! Sneaking veggies into pasta sauce is my favorite way to eat more greens when I’m sick of vegetables! You can also make this a high protein meal by swapping regular pasta with protein pasta! Ingredients Pasta of choice, I used mafaldine 1/2 a yellow onion, diced 1 tbsp mincLed garlic 1 cup frozen peas 1 5 oz bag baby spinach 1/2 cup low fat cottage cheese 1/3 cup Parmesan cheese 1 tbsp lemon juice 2 tsp salt (plus more to taste as needed) 1/3-1/2 cup unsweetened almond milk Instructions 1. Cook pasta according to package instructions. 2. Place a nonstick pan over medium heat and spray with olive oil cooking spray. Add onion and garlic and cook for 2-3 min. Add frozen peas, spinach and 2 tbsp water, cook until spinach is completely wilted. 3. To a high speed blender add cottage cheese, Parmesan, lemon juice, salt, and using a slotted spoon add cooked spinach/peas, then add milk starting with 1/3 cup and increasing to 1/2 cup if too thick. Blend until smooth. 4. Transfer cook pasta back to the pan you used to cook the spinach and pour sauce on top, mix so that it is evenly coated and enjoy! #veggiepasta #pastarecipe #pastatiktok

Quick one pot veggie pasta bake Ingredients: 1. 300-400 g Pasta 2. 1 small red onion 3. 3-4 fresh garlic cloves or 1/2 tbsp garlic paste 4. 1 jar of pasta bake sauce 5. 1 tbsp tomato puree 6. 1/4 tsp sugar to balance the flavours 7. 1 tsp garlic powder 8. 1 tsp all purpose seasoning 9. 1 tsp black pepper 10. 1/4 tsp paprika 11. 1/2 tsp Cajun seasoning 12. Sweetcorn 13. Spinach 14. Mushrooms 15. 1 tbsp butter 16. Cheese as much as your heart desires. Steps: 1. Boil pasta in salted water until al dente. Reserve some pasta water for later. 2. Heat oil in a pan and add the chopped onions until translucent. Add the garlic and cook for around 30 seconds. 3. Add the sauce and tomato puree followed by the spices. Cook this for around 3-4 minutes and add the reserved pasta water. 4. Add the veggies and the pasta and mix well. 5. Add in the butter. This makes it creamy. 6. Throw in the cheese. 7. Mix well and let the cheese melt. 8. Transfer pasta to dish. 9. Garnish with parsley and more cheese. 10. Roasted veggie pasta * 100 g 3.5 oz Cherry Tomatoes * 1-2 Small Bell Peppers * 100 g 3.5 oz Mushrooms * ½ Medium-sized Zucchini * 1-2 Small-sized Onions * 1 Whole Head of Garlic * 1 tbsp Italian Seasoning * 1 tbsp Olive Oil * Salt to taste * A handful Fresh Basil * 120 ml ½ cup Oat Cream * 120 ml ½ cup Water or Low Sodium Vegetable Broth * 1 tbsp Tomato Paste * Pasta for 4 servings according to package instructions * As needed Pasta Water * Fresh Basil and Chili Flakes for garnish * 120 ml ½ cup Cooked Beans (optional) Instructions   Roasting Vegetables: * Preheat your oven to 200°C (392°F). * Prepare a baking sheet by lining it with parchment paper. * Wash the cherry tomatoes, bell peppers, mushrooms, zucchini, and onions. * Cut the bell peppers into chunks, slice the mushrooms, slice the zucchini into half-moons, and peel and quarter the onions. * Cut the top off the head of garlic to expose the cloves. * Place all the prepared vegetables on the baking sheet. * Drizzle with olive oil, sprinkle with Italian seasoning, and add salt to taste. Toss to coat evenly. * Roast in the preheated oven for 30 minutes or until the vegetables are tender and slightly charred. * Remove from the oven and let it cool slightly. Making the Sauce: * Squeeze the roasted garlic out of its skin and transfer it, along with the other roasted vegetables, to a blender. * Add a handful of fresh basil, oat cream, water or vegetable broth, tomato paste, and the cooked beans. * Blend until smooth. Finishing the Dish: * Cook your pasta according to the package instructions, saving some of the pasta water. * Pour the blended vegetable sauce into a pan over medium heat. * Add the cooked pasta and a bit of the pasta water to reach your desired sauce consistency. Add tomatoes, zucchini, bell pepper, red onion, garlic, olive oil, and spices/seasonings to your baking dish. Gently toss to coat the vegetables in oil and seasonings. Ingredients: 1 box of pasta of choice I used brown rice tagliatelle 2 red bell peppers 3 large carrots 2 large tomatoes 1 pint cherry tomatoes 1/2 a yellow onion 1 head of garlic, with top cut off 1 tbsp olive oil Salt and pepper 1 tsp Italian seasoning 1/2 cup unsweetened almond milk 1/3 cup Parmesan cheese (can use nutritional yeast if dairy free) Instructions: 1. Preheat oven to 450 F and line a baking sheet with parchment paper. 2. Prep the veggies and add them to the baking sheet. Drizzle with olive oil, salt and pepper, and Italian seasoning. Bake for 30 minutes or until tender. 3. While veggies cook, prep pasta according to package instructions. Drain pasta and add it back to the pasta pot. 4. When veggies are done add them to a high speed blender along with cheese, and almond milk blend until you reach a thick creamy consistency 5. Add sauce to the pot with pasta and heat over low for 2 minutes, stirring until everything is well combined.
