🧡pumpkin cinnamon rolls🧡 *makes 12 rolls Ingredients for the dough: - 4 2/3 cups all purpose flour - 1/3 cup granulated sugar - 1 packet of active instant yeast (2 1/4 tsp) - 2 tsp pumpkin pie spice - 1/2 tsp salt - 1 egg - 6 Tbsp unsalted butter - 1 cup whole milk - 2/3 cups pumpkin puree Filling: - 1/2 cup brown sugar - 1 Tbsp ground cinnamon - 1 tsp pumpkin pie spice - 1/2 tsp nutmeg - 1/4 tsp ground cloves - 6 Tbsp unsalted butter, softened - 1/4 cup heavy cream Frosting: - Whisk together 1/4 cup unsalted butter (at room temp) and 4oz cream cheese (at room temp), and 1 tsp vanilla extract. Add in 3/4 cup powdered sugar, 1 tsp pumpkin pie spice and 2 tbsp milk. Directions: 1. For the dough: Microwave the milk and butter together until the butter melts. Mixture should be warm, not hot. 2. In the bowl of a stand mixer, mix the flour, yeast, sugar, pumpkin pie spice and salt using the hook attachment. Add in the milk/butter mixture and mix on med-low for about 2 min. 3. Add in the egg then slowly increase the speed for 1 min. Then add in the pumpkin puree and continue mixing on high for 7min. If the dough is really sticky by the end, add in 1-2 Tbsp of flour. 4. Knead the dough into a smooth ball and place it into a greased bowl. Cover and store in a warm place to rise for 1 hour. 5. Make the cinnamon filling: mix together the butter, cinnamon, brown sugar, pumpkin pie spice, nutmeg, and cloves. 6. Preheat oven to 350 degrees Fahrenheit. 7. Lightly flour a surface and roll out the dough into a long rectangle. Spread the cinnamon sugar filling on top of the dough. 8. From the long end, roll dough into a tight roll. Use string to cut out 12 rolls. 9. Place rolls in a greased 9x13 inch pan. Pour the 1/4 cup heavy cream over the rolls and brush each roll so it’s covered in cream, 10. Place in the oven for ~30min or until golden brown. Let them cool. 11. Wait until rolls have cooled for at least 15 min before spreading the frosting on top. 12. In a microwave-safe measuring cup, microwave Carnation Evaporated milk for 20-30 seconds until warm. Pour into a large bowl. Add sugar and whisk. Sprinkle the yeast over the top. Add pumpkin puree, egg, and melted butter. Whisk until nice and creamy. 2. Add bread flour, pumpkin spice, and salt. Stir with a wooden spoon until just combined. Knead the dough using your hands on a floured surface or a stand mixer fitted with a dough hook for 8 minutes. Transfer the dough to a large bowl sprayed with nonstick spray. Cover with plastic wrap and allow the dough to rise in a warm spot for at least 1hr until doubled in size. 3. While the dough is rising prepare the baking pan and mix the filling. Spray nonstick spray in the bottom of a 9x13 baking pan. Line the pan with parchment paper and set aside. In a small bowl add brown sugar, cinnamon, and pumpkin spice, Mix with a fork until combined. Set aside. 4. After the dough has doubled in size, transfer to a well floured surface. Using a rolling pin roll the dough into a 14x16 rectangle. Spread softened butter over the dough leaving a ¼” margin around the far side of the dough. Sprinkle the spiced brown sugar mixture over the top of the butter. Tightly roll up the dough starting on opposite side of the margin and place seam side down pinching the seams to seal the best you can. Cut off about 1” on the ends of the dough and set aside. Slice the dough into 12 equal portioned rolls. 5. Place rolls into the prepared baking pan. Cover with plastic wrap and allow the rolls to rise for 30-45 minutes. While the rolls are rising, preheat the oven to 350 degrees. 6. Remove the plastic wrap and pour the 1/3c of Carnation Evaporated Milk evenly across the top of the rolls. Bake in the oven for 25 minutes until slightly golden around the edges. Remove the rolls from the oven and cool for 10 minutes before frosting. 7. To make the frosting, add cream cheese, butter, powdered sugar, vanilla, salt, and maple syrup to the bowl of an electric mixer and beat until smooth. Spread all over the pumpkin cinnamon rolls and serve!

Icing: * 1 cup powdered sugar * 8 oz cream cheese * 1/4 cup brown butter, chilled * 1 teaspoon vanilla bean paste * 2 tablespoons heavy cream Instructions: * In a bowl, dissolve yeast in warm milk. Let it sit for 5 minutes until it becomes frothy. * In a large mixing bowl, combine the yeast mixture, sugar, melted butter, salt, pumpkin puree and egg. Add flour gradually and mix until a soft dough forms. * Knead the dough on a floured surface for about 8-10 minutes, or until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 90 minutes, or until doubled in size. * Preheat the oven to 350°F (175°C).
