Ingredients: Gold or red potatoes, skin on + quartered Carrots, chopped Red bell pepper, chopped Squash, chopped Zucchini, chopped 1 red onion, quartered 4 cloves garlic, roughly chopped Avocado oil Salt Black pepper Paprika Cumin For garnish: 1 lemon Parmesan cheese, shredded Fresh parsley Directions: Preheat oven to 400°F (200°C). Groceries have been SO expensive recently so ‘budget bites’ will bring you NEW recipes that make use of pantry and freezer staples to help stretch your grocery budget! This one pan vegetarian taco skillet is a FAVOURITE of mine it’s so easy to make and the total of all the ingredient was $18.43 which works out to just under 20/serving (highly recommend taking advantage of in store sales on cheese and freezing it if you can + purchasing dry ingredient such as quinoa in bulk) ! For the Tostadas: ▪️2 Tbsp Avocado Oil▪️6 Corn Tortillas▪️Kosher Salt▪️2 Tbsp Cotija Cheese▪️ . 🌱Vegan Modification: Leave out the cheese . 1️⃣ Preheat oven to 400°F (convection if you have it) and drizzle 2 Tbsp avocado oil on a baking sheet 2️⃣ Coat tortillas in oil on both sides, sprinkle with some salt, and bake for 7 minutes on the first side, flip and bake for 3-4 more minutes until golden brown and crispy (if you are not using convection you may have to cook a bit longer) 3️⃣ Mix together the ingredients for the dressing and set aside 4️⃣ Place ingredients for the ceviche in a bowl and pour the dressing on top; mix to evenly coat the veggies and serve on top of the tostadas with 1 tsp cotija cheese sprinkled on each one - enjoy! . ⏲25 minute total prep + cook time .
