FOR THE WHIPPED FETA 1 (8 ounce) block of feta, crumbled ¾ cup plain greek yogurt Zest from 1 lemon 2 tablespoons extra virgin olive oil FOR THE APPLE TOPPING 2 tablespoons olive oil 1 honeycrisp apple, diced 1 shallot, diced ¼ cup chopped pecans, plus extra for topping 2 tablespoons honey, plus more for drizzling 1 tablespoon chopped fresh sage 1 teaspoon fresh thyme, stems removed ½ teaspoon ground cinnamon 1. Make the apple topping by heating a skillet over medium heat. Heat 2 tablespoons olive oil, then add apples and shallots. Cook for 3 to 5 minutes, or until both begin to soften. 2. Add pecans, honey, sage, thyme, and cinnamon. Cook another 3 to 5 minutes, so the apples can caramelize. 3. Turn off heat and set aside to cool. 4. While the topping cools, make the whipped feta. Add feta, greek yogurr, and lemon zest to a food processor. Pulse until combined. 5. Slowly stream in 2 tablespoons olive oil and blend until creamy and smooth. 6. Spoon whipped feta into a bowl or serving dish. Top with apple topping and garnish with additional chopped pecans, thyme, and a drizzle of honey. Serve with crackers, fresh vegetables, or pita for dipping.
