Crunchy Elderflower Fritters - Soo delicious! 😋 Elderflower fritters: 10-15 Bunches of elderflowers 70g flour 1/2 tsp baking powder 1 heaped tsp icing sugar 1 pinch of salt 2/3 cup sparkling or soda water 1/2 tsp of vanilla extract (optional) (add more flour or more water to adjust to desired thickness of batter) Vegetable oil - (I used canola) Mix dry ingredients together, add soda water and mix. Heat oil in a pot, once oil is hot drip a little batter mixture in, and if it fizzes well then it should be hot enough. Dip elderflower cluster into batter then into hot oil, until golden (mine took around 20-30 seconds). Drain fritter on paper towel to get rid of excess oil. Sprinkle on some icing sugar and/or honey and serve as dessert with stewed fruit or ice-cream. Elderflower Vinegar 🌼 Another easy and delicious recipe with the wonderful elderflowers that are everywhere right now! When foraging elderflowers, you want them full of pollen. The newly opened flowers are best. Best collected in the morning on a sunny day 🌞 It's common to have a lot of tiny flies present on the flowers.The best way to get rid of them is to place the flowers in a bowl outside for an hour or so. Most of them will vacate. It’s also a good idea to is to gently shake the flowers as you pick them. (Don't run the flowers under water, as you'll wash off the pollen and much of the flavors). Ingredients for 500ml - ✨ Around 6 - 10 elderflower heads worth of elderflowers depending on desired strength of flavour. ✨ 2 to 3 tablespoons of local honey or maple syrup (optional at this stage-you can do it later, too) ✨ Around 460ml of apple cider vinegar (raw or pasteurized). You can use white wine, rice, or champagne vinegar. Steps - 🌼 Use the flowers as soon as possible after harvesting. To remove them from the stalk and small stems, rub gently with your thumb and forefinger in a downward motion over a bowl. The size of the flowers will vary based on the type of elder tree, but the idea is to pack them very loosely into the bottle or jar. 🌼 Add the sweetener and vinegar, then close the lid. Shake the jar gently so the syrup and vinegar mix well. You want The jar should to be quite full-you can add more vinegar if necessary. 🌼 Let stand for 2 to 3 weeks in a cool, dark place. Strain the vinegar and discard the flowers. Transfer the vinegar into a clean bottle or glass container. Cap tightly and store in the refrigerator or a cool dark place (below 65°F/18°C). Shelf life for optimum flavors is around 6 months, or up to a year in perfect storage conditions. I said Poison Hemlock, but I meant water hemlock (Cicuta). There are many characteristics that separate elder from water hemlock. This is important because they *can* grow in the same environment! Elder has lenticels and woody bark, water hemlock has only herbaceous growth without lenticels. Elder has singly compounded leaves, water hemlock has multiply compounded leaves. Elderflower clusters are more densely spaced than water hemlock’s. Elderberry leaflet edges are typically much more finely serrated than that of water hemlock. There are more details that you could find in a field guide too! I encourage you to look these two up to become more comfortable with their differences before foraging for elderflower. After living in Sweden for 8 years elderflower cordial is now one of my favorite summer flavors! I was very relaxed (read: a little sloppy) making the cordial this year and didn’t even check my recipe before making. I used 10 blossoms, 2 whole lemons, 1kg of sugar and 1 L of water. Recipes: Cordial 🌿 15-20 elderflower heads, gently washed Zest and pulp of 2-3 lemons 1 liter of water 500g sugar 25g of citric acid (optional preservative) Tempura 💮 10 elderflower heads Tempura batter (50g rice flower flour, 50g all porpusee, 150ml ice-cold sparkling water, pinch of salt) Remember it’s important to use elderflowers correctly, as not all parts of the elder plant are safe to consume. The flowers and ripe berries of the elder plant are edible. And I have widely used them in cooking and traditional remedies.. more to come! 😉🌱 The leaves, stems, roots, and unripe berries though, contain a compound that can produce cyanide in the body and are toxic if not properly processed. Try to avoid these parts if you are not sure. Also when foaging only use the flowers that are fully bloomed and cream-colored. Here’s how to identify elderflower for cordial and champagne so you don’t end up making something out of cow parsley or something else which looks very similar. First up - Elderflower leaves have serated edges and are commonly found in clusters of 5 or 7. Although young stems are green Elderflower grows from a tree or a bush so you should be able to see a brown branches. Elderflowers have a creamy pale yellow colour, you don’t want to pick them when they’re brown. pick elderflower from late may to mid June when the buds are freshly open on a hot day. Don’t buy elderflower cordial, not only is it ridiculously expensive but its SO easy to make at home and freezes very well to have during off season! This is such a nostalgic drink for me, for those who don’t know (Americans?) a cordial is a sweet, concentrated liquid that you mix with water or soda to make a lovely drink. Elderflower is floral and delicious and SO worth making!! The citric acid is essential as it gives it the shelf life and also makes it taste a little bit better, just make sure its food grade. This is the one that I buy along with all my other cordial making essentials https://amzn.to/3R4EbQ7 *aff link Ingredients: 30-40 elderflower heads 60g citric acid 800g sugar 2 litres water 1 orange 1 lemon Method: Gently wash your elderflowers to remove any bugs. Fill your pot with water, stir in the sugar and then bring that to a boil. Once boiling, remove from the heat and stir in the citric acid, lemon and orange slices and the elderflowers. Leave this with the lid on to steep over night (8-12 hours). Using a tight sieve, I use muslin cloth and a sieve to be sure, drain the cordial into bottles. I store any bottle’s I’m not using in the fridge (just make sure they aren’t completely full so when they freeze the bottle doesn’t burst).
