High-protein, Low-calorie, SIngle-Serving Strawberry Cheesecake! This takes less than 30 minutes and gives you a delicious high-protein, decadent cheesecake! Ingredients: 130g (1/2 cup) low-fat or fat-free cottage cheese, blended! I always blend my cottage cheese in its container the moment I get it! 30g (1/4) low-fat or fat-free vanilla Greek yogurt 1 scoop of @Clean Simple Eats Strawberry Cheesecake flavor. Simply Vanilla ALSO works, how cool? Stevia drops or your favorite zero-calorie sweetener to taste 3 strawberries Juice of a 1/4 lemon Optional: powdered sugar Directions: 1. Mix cottage cheese, yogurt, sweetener, and lemon juice in a bowl! 2. Stir in protein powder and 1 chopped strawberry 3. Transfer the mixture to an oven-safe dish or springform pan! Mine is 4 inches and is linked at the link in my bio! 4. Back at 340F for 15-20 minutes, or until a toothpick inserted into the center comes out clean. 5. While it's baking, chop up 2 more strawberries and microwave them for 45 seconds until they turn into a compote. 6. Remove the cheesecake from the over, let it cool for 5 minutes, add the compote on top and ENJOY! 7. You can sprinkle with a little powdered sugar if desired!
