Preheat oven to 350 degrees. 2. Grab mixing bowl. Add wet ingredients. Mix. 3. Grab another mixing bowl. Add dry ingredients. Mix. 4. Add dry ingredients to wet ingredients. Mix and whisk thoroughly. 5. Add batter to cupcake molds. Add to muffin tray (makes 4 medium cupcakes). Bake at 350 degrees for 10 minutes. 6. Let them rest for at least 20 minutes (they will still be cooking internally at this time so taking out slightly underdone is ideal). 7. Grab another mixing bowl. Add ingredients for frosting. Mix thoroughly (let frosting cool in fridge for 30+ mins for a thicker/denser consistency). 8. Grab another mixing bowl. Add ingredients for topping (*optional*). Mix well. 9. I never bake but I made these for a birthday and I've been dying to learn some baking skills. This baddie came out to 200 calories per Cupcake with 13 grams of protein! . . Ingredients: For the batter 💕 - • 1 cup oat flour (I blended Oatmeal until it became grainy and used that as flour) • ½ cup whey vanilla protein powder from Dymatize Nutrition • 3 tablespoons cornstarch • 2 and ¼ teaspoon baking powder • ½ teaspoon salt • ½ cup maple syrup • 1 brown egg • 4 and ½ tablespoons olive oil • ⅓ cup Almond milk • 1 tablespoon vanilla extract • 1 teaspoon stevia For the Frosting 💕 - 100 grams of PB Fit Powdered Peanut Butter 59 ml of Almond Milk 85 grams of chobani vanilla yogurt On Top of Frosting 💕- 15 grams of sweetened coconut flakes 1/2 biscoff cookie Instructions: - mix together all the dry ingredients into a bowl then let sit for 5 minutes - in a separate bowl mix together all the wet ingredients - then add both ingredients together in one bowl and mix and smash down until everything is mixed in and creamy.
