CREAM OF CAULIFLOWER 🍂 SOUP SEASON 2 welcome back to SOUP SEASON 2, my new series, where I show you how to make the best soups in town 😍 for EPISODE 2, I’ve made my CREAM OF CAULIFLOWER SOUP. it’s hearty, comforting + a soup guaranteed to keep you warm this autumn 🍁 I’ve written my full recipe for you below - so enjoy! and as always, let me know if f you give it a go 👇 Alfie x INGREDIENTS (serves 4-6) 1 large cauliflower 1 white onion 1 medium potato 1 tbsp butter 4 garlic cloves 1 tbsp fresh thyme 1l vegetable stock 250ml cream 2 tbsp nutritional yeast (optional) Chives Chilli Oil Olive oil Salt Pepper METHOD 1. Remove the leaves from the cauliflower (roast as a snack for later), then pick the florets + roughly chop the stalk. 2. Dice the onion + potatoes, then warm 1 tbsp olive oil in a saucepan at a medium high heat. Add the butter + melt. 3. Add the onions + potatoes with a pinch of salt. Allow to soften for 5-10 mins. 4. Chop the garlic + thyme leaves, then add + mix, frying until fragrant. 5. Add the cauliflower florets (reserve a few for garnish) + stir, cooking for a further 5 mins. 6. Prepare the vegetable stock + add enough to the pan to cover the veg. Bring to a boil, then reduce + simmer until cauliflower has softened. 7. Add the cream + nutritional yeast if using, stirring well. 8. Get everything into a blender + blitz until cream + smooth. Season to taste with salt + pepper, adjusting consistency with a splash more stock if required. 9. Slice the leftover cauli in half, then fry in a pan until caramelised. Ladle the soup into bowls, top with the cauli pieces, chopped chives, a swirl of cream + chilli oil. 10. CHEF’D UP- soup szn 🍜 • KETO-ISH- loaded cauliflower soup (like loaded potato soup) • This was so warm and cozy and truly tasted like a loaded potato soup! This was a win & of course so easy to make! • Roast the cauliflower on 425 for like 30 mins, then add diced onions to a pot, season, cook a little then add the roasted cauliflower and some chicken broth (or whatever broth you’d like), blend, add back to the pot, more broth, and I added more roasted cauliflowr because I like the chunks. Dairy-Free ROASTED CAULIFLOWER SOUP WITH SIZZLING PISTACHIO-ROSEMARY OIL! I’m not sure if it’s the soup or the oil, but I want to seriously just swim in both 🙃 This is one of my favorites that got a little upgrade this year! • Serves 4-6 For the soup: 1 large chopped cauliflower head, cut into pieces  2 medium yellow potatoes, chopped  1 head garlic, top sliced off 1 yellow onion, halved 4 sprigs fresh thyme 3-4 tbsp olive oil ¾ tsp salt, plus more to taste Pepper, to taste 2 ½ cups vegetable broth ¾ cup raw cashews 1 tbsp tamari soy sauce • For the oil: 1 tbsp chopped scallions 2 tbsp chopped fresh rosemary ¼ cup chopped pistachios Pinch salt Pinch pepper ½ cup avocado oil  • Optional toppings:  Fresh thyme leaves Cracked pepper Lemon juice • 1️⃣Preheat the oven to 425.2️⃣Add the cauliflower and potatoes to a sheet pan. Add the thyme, then drizzle with the olive oil, salt and pepper. Toss to combine. Add the onion and garlic, then drizzle the tops with olive oil. Turn the onion and garlic face down. Place the sheet pan in the oven for 50-55 minutes, flipping the cauliflower and potatoes halfway, until tender. 3️⃣While the cauliflower roasts, make the oil. Add the scallions, rosemary, pistachios, salt and pepper to a small bowl. Heat the oil over medium heat until it is sizzling. Pour the hot oil over the bowl. Let the oil sit to develop flavor. 4️⃣Remove the sheet pan from the oven, squeeze out the roasted garlic, remove the outer layers of the onion and discard the shells and the thyme stems.5️⃣Add the cauliflower, potatoes, onion and garlic to a high speed blender with the broth, cashews, tamari, salt and pepper. You'd never guess that this creamy soup is actually vegan! Topped with crispy spiced chickpeas (of course), it's such an easy, hands-off dinner. 1. Cook Soup: Roughly chop 1 medium head of cauliflower and ½ yellow onion. Add them to your slow cooker along with 1 cup cashews and 4 cups vegetable broth. Make sure the cauliflower and cashews are submerged in the broth. Cover and cook until cauliflower is tender—either 3 to 4 hours on high or 6 to 8 hours on low. 2. Blend: Once the cauliflower is tender, blend everything until smooth, either using an immersion blender or by carefully transferring to a countertop blender. Add ½ tsp salt to taste. 3. Crispy Chickpeas: Preheat the oven to 400°F. Toss 1 drained can of chickpeas with 1 Tbsp olive oil. Spread them on a baking sheet and bake for 20 minutes, or until crispy. While hot, toss the chickpeas with 1 tsp smoked paprika, ½ tsp cumin, and ¼ tsp salt. 4.
