#ad In honor of Día de los Muertos and my heritage, I’m excited to partner with @Cacique to share my cherished family recipe of Tamales de Rajas Con Queso! Growing up, my grandma, mom and I made these tamales together. Though she’s no longer with us, making these tamales keeps her memory alive and helps pass on our beloved family traditions to my kids and future generations. I used Cacique Ranchero brand Queso Fresco, a milky tasting, crumbly in texture and a salty cheese, to take this recipe to the next level. Ingredients: 8 oz lard or shortening 2 tsp salt 2 tsp baking powder 4 cups instant corn masa for tamales 5 cups chicken broth, 1 cup water 5 large poblano peppers, roasted, peeled and cut into strips(cook in salsa) 20 oz Cacique Ranchero Queso Fresco 24-26 soaked corn husks To garnish with Cacique Crema Mexicana Cacique Salsa Verde Instructions 1. Begin by beating the shortening. Once creamy, add the salt and baking powder. 2. Alternate between adding the instant corn masa and liquid until fully combined. 3. Mix until the mixture is nice and fluffy. 4. Allow the masa to rest for at least 15 minutes. 5. Spread the masa onto a corn husk, add a few strips of Cacique Ranchero Queso Fresco, top with rajas, and crumble more Queso Fresco on top. 6. Fold the sides of the corn husk towards the center and then fold the bottom up to close the tamal. 7. Fill the steamer with water, ensuring that the water does not touch the tamales. 8. Place the tamales in a steamer with the folded side down. 10. Cover the tamales with left over corn husk, a damp cloth and and lid. 11. Steam the tamales for about 1 hour to 1 hour and a half, or until the masa easily separates from the corn husk. 12. Allow tamales to rest 15 minutes before serving. 13. Recipe: 1 package Cacique Ranchero brand Queso fresco 1 avocado 1/2 cup Cacique Crema Mexicana Small bunch of cilantro 3-4 chile arbol 3 garlic cloves 1/4 onion 1 serrano 1 jalapeño 1/2 cup water 9 tomatillos Directions: Heat a dry skillet or comal over medium heat. Add the chile de árbol, tomatillos, garlic, onion, serrano and jalapeño peppers. Roast them until they get a nice char on the outside, turning occasionally. The garlic and onion should be slightly softened and fragrant, and the chiles should darken but not burn. Once done, remove from heat and allow them to cool slightly. To a blender add the roasted ingredients, Cacique Crema Mexicana, avocado, cilantro, water, garlic powder, and salt. Taste and adjust seasonings to your liking.
