Setup my porch pickup for my sourdough cottage bakery with me 🧚🍞 Some common questions you guys have had about my little cottage bakery/micro bakery: 🍞 where am I located? 🧚 I am in Broken Arrow, Oklahoma. My accent is a bit weird because I’m originally from Australia so it’s mixed now 🦘🤠 🍞what do I do with leftovers? 🧚 since I do a preorder system I do not often have many leftovers. Any leftovers I do have, I sell on the porch (my customers love when I have extras 😆) or give away. 🍞 do I have real customers? Why don’t I film them? 🧚 I do have real customers (if you’re my customer say hi in the comments 😍). There are about 50 people that order bread from me each week. I do not film them, because i think that would be disrespectful and rude? There are times I’ve gotten little clips with permission but I want my customers to feel safe and cozy when they come to pick up their bread, I would hate for them to be stressed that I may film them. So that’s just not something I do. 🍞do I make a full time income from my bakery? 🧚 I make a modest full time income from selling my baked goods. I plan to talk about this more transparently because its not a get rich quick scheme and it’s a LOT of work. So what do ya wanna know? SOURDOUGH BAGUETTE TUTORIAL + how I bake sourdough baguettes in bulk 🥰 ✨I forgot to mention, that I weigh out my baguettes into 400g each! And if you’re gonna cold proof them overnight and cover them with cling wrap, dap the tops with oil so that the wrap doesn’t stick to the dough. I just use my original sourdough recipe for this. For easier shaping you can try lower hydration if you need to! 💛 My formula: 100g starter 500g flour (I do 450g AP or bread flour and 50g spelt/wholewheat) 365g water 10g salt *this yields one original sourdough loaf or 2 larger baguettes or 3 smaller baguettes. So in bakers percentages it is: 20% starter 90% AP or bread flour 10% whole-wheat 73% water 2% salt And I weigh out my baguettes to 400g each 🍞 HAPPY BAKING 🥖🥖🥖 #sourdough #baguette #tutorial #sourdoughbaguette #sourdoughbread #sourdoughtok

Warm weather is coming 🥵 here’s some tips! 🧚 If your loaves are all of a sudden having some ✨attitude✨, it may just be the changing of seasons. 🌾warm dough temps and room temps will cause your dough to proof faster, whereas cold dough temps and room temps will cause slower proofing times. So with summer coming, you may need to shorten bulk ferment! 🌾I usually use 100g of starter per loaf in the winter, and 50g per loaf during the summer. 🌾you can temp your dough with a simple meat thermometer to get an estimate on how long your bulk ferment will take. Losing all your confidence after a bad batch is so real 🥲😩 My test batches of my sourdough lemon poppyseed rolls turned out perfect, and so I went to make them in bulk today and THE DOUGH WAS JUST WRONG. Too acidic, so it lost all its strength and was just falling apart. I remade them with a slightly different process (added the acidic inclusions at the final stage of mixing instead of beginning) and the dough is finally right again but ngl the doughpression is real 😭 IT HAPPENS ☠️ Happy baking :’) #sourdough #bread #bakingmemes #funnymemes #bakingfail #sourdoughfail #sourdoughtok
