Spicy Chicken Rigatoni 🍝
A little freebie from the upcoming cookbook!
- 4 tbsp olive oil (+2 tbsp)
- 1 chicken breast, sliced thinly
- 3 tbsp Seasoning Blend
- 3 tbsp tomato paste
- 3 garlic cloves, minced
- 12 oz. diced tomatoes
- 1 tsp crushed red pepper,
add more if you like spicy
- 1 cup heavy cream
- salt and pepper to taste
- parmesan and basil for garnish
- 1 lb rigatoni pasta,
save 1 cup pasta water
Seasoning Blend:
- 1 tbsp paprika
- 1 tbsp complete seasoning
- 2 tsp black pepper
- 1 tsp thyme
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp parsley flakes
In a large pot, boil pasta to al dente. Drain. Set aside and drizzle with olive oil.
I same pot heated to medium high, add 4 tbsp oil, chicken and 3 tbsp seasoning blend. Saute until browned but not fully cooked through, about 2 minutes. Remove from pot and set aside
Add 2 tbsp remaining oil and add tomato paste, garlic and red pepper flakes. Saute for 15-20 seconds. It should get a little darker and more fragrant.
Add diced tomatoes and simmer on medium heat for about 5-10 minutes until it resembles paste. Add cream (and remaining seasoning blend if needed) and simmer for another 5 minutes. Add salt and pepper to taste.
Add 1 cup pasta water and pasta and simmer on low for a minute or two to allow sauce to emulsify and thicken.
Serve with parmesan and basil with a side of garlic bread.

Here's my 15 bean soup recipe Im sharing again for all of my fellow anemia sisters! 😙💅🏾 Brine: - 2 tsp baking soda - 2 tbsp salt - 1 large container of room temp water (at least 4 qts) Beans: - 20 oz 15 bean soup bag, Cajun adds better flavor - 4 tbsp garlic, minced - 1 onion, diced - 1/2 bell pepper, diced - 3 to 4 cups ham, shredded/diced (bone-in piece also preferred) - 4 tbsp butter - 3 tbsp black pepper - 1 tbsp thyme - 1 tbsp red pepper flakes - 8 cups chicken broth, no salt or low sodium - 2 bay leaves - 1/2 cup lemon juice - 6 cups chopped kale Sort through your beans for any debris or bad beans. Soak them in a large container filled with brine solution for 3 to 4 hours. Drain water from beans and rinse with clean water. Add to crockpot. Saute onion and bell peppers until translucent in a tbsp of oil and add to beans along with garlic. **If using fresh garlic saute with the onions and bell peppers** Chop ham off bone (if using bone-in) and add meat and bone to beans. Top with the cajun seasoning pack and add the butter, black pepper, thyme red pepper flakes, broth, bay leaves and lemon juice. Start crockpot on low with 6 hour cook time adding water throughout the cook if the beans seem too dry. The beans will thicken as they cool so lean towards a looser soup About 15 minutes before theyre finished add kale, cover and let cook until preferred tenderness. Notes: - Can also use sausage or chicken instead of ham for less salt content - Kale can can be substituted for any leafy green like collards, spinach or cabbage so add as much as you want! ·2024-6-30Making bread at home is easy! 16 oz Bread flour 8 oz Water 2 tsp Salt 2 1/2 tsp Instant yeast 1 Egg 3 tbsp Butter 1 1/3 tbsp Sugar 1/4 cup Milk powder Eggwash to bake Mix yeast with warm water and half of sugar. Set aside and mix remaining dry ingred. in mixing bowl. Add egg & yeast mix. Knead 3 min. Add butter, knead 8 min. Proof 1.5 hrs, roll into 4 balls. Flatten each ball and roll into long rolls.
