I’m showing you some examples you suggested as a filling to the katayef AKA/stuffing pancakes. You can make them smaller and fill them with any sweet or savory filling you prefer. In this reel, they are filled with hazelnut spread and strawberries, cannoli filling, butter and honey, sweet cream and pistachios but the choices are endless from sweet to savory. The batter itself is so delicious considering it’s totally vegan. It’s honestly worth a try. You can also brush with butter or oil, bake or fry if you prefer. For the batter, you’ll need:
2 cups of all purpose flour
1/2 cup semolina
2 tbsp sugar
1/2 tsp of baking powder
1/4 tsp baking soda
1 tsp instant yeast
3 cups of water
Preparation:
Mix all the ingredients in the blender, add the baking soda last and blend. There is no need to rest the batter. You can preheat the a non stick pan to medium temperature and start pouring the batter one after the other. Don’t add any oil to the pan.

I make this dish at least once a month. The chicken is fall-off the-bone tender. The potatoes are so good, lemony, flavorful and very tasty. Hello my beautiful friends! I hope you’re having a wonderful Saturday! My morning is never complete without my favorite cup of coffee and most importantly a very warm freshly baked cake to go with it. This one is a winner spiced with cardamom, cinnamon, cloves, nutmeg and orange zest. Loaded with fresh cranberries and pecans. I’m in cake heaven, do you care for the recipe? Ingredients: 1 cup of all purpose flour 1/2 cup spelt flour 1/2 cup oat flour 1/4 tsp baking soda 1 tbsp baking powder 3 tbsp honey 1 stick unsalted butter 1 egg 1/2 cup buttermilk Zest of 1 orange 1/4 tsp cinnamon 1/4 tsp cardamom 1/8 tsp nutmeg 1/8 tsp cloves 3/4 cup fresh or frozen cranberries 1/2 cup pecan halves 1/3 cup orange juice 2 tbsp ground flax seeds 1 tsp Vanilla extract For the glaze, 1/2 cup powdered sugar 1 tbsp orange juice 1/2 tbsp soft butter *extra butter for the pan Preparation: Add all the dry ingredients together in a bowl including the spices and orange zest. Using a grater shred the cold butter on top of the dry mixture, mix in the butter with your fingertips very gently and quickly. Add the cranberries. Mix the honey, buttermilk and egg, vanilla extract addd slowly on top of the dry ingredients. It will be a thicker batter, don’t over mix, just until things are barely combined. The texture of this batter is somewhere between a scone and a cake. It’s addictive. Spread in a greased 9 inch cast iron pan, top with the pecans and bake at 400 degrees F until golden brown. Who knew Panera Soufflé is the easiest to make at home. It’s the perfect breakfast souffle recipe, so light, good and much cheaper of course. The result is more impressive than you think. This time I made it crustless and family style. You asked me to make a crustless family style version and here it is. INGREDIENTS: for the egg mixture; 7 extra large eggs/ 68 g each 1 tbsp fresh chives 1 1/2 tsp salt 1/2 tsp black pepper 1/4 tsp cayenne pepper for the bechamel; 1 cup milk/ warm 60 g butter unsalted 5 tbsp all purpose flour 1 cup roughly chopped baby spinach 1 cup shredded fontina cheese 1/2 cup gruyere cheese you can use mild cheddar instead 5 thin slices of bacon precooked 1/2 cup sweet bell peppers PREPARATION: Chop roughly the spinach and dice the bell peppers. Set aside, then crack 7 large eggs, season with the salt, pepper, cayenne and chives. Whisk the eggs for 2 minutes then set aside. In a pot melt the butter, add the flour and cook for a minute. Add the milk and mix until it comes to a boil and thickens. In a separate small bowl add 1 tbsp of the bechamel, then 1-2 tbsp of the egg mixture. Whisk together then add to the bechamel and mix it in. Now add the rest of the egg mixture to the bechamel and whisk until creamy and smooth. Prep the 9 inch baking dish with some oil or butter, grease the inside well. Add the egg mixture, add more cheese and top with one slices of bacon. Sprinkle with black pepper and bake at 385°f for 30-35 minutes or until golden and nicely puffed. To make this easy, healthy, creamy, cheesy comfort meal, all you have to do, Collect the ingredients; 2 medium russet potatoes 2 large zucchinis 1 large eggplant 1 colored sweet pepper 3 cloves of garlic sliced Salt and pepper to taste 3-4 tbsp olive oil For the bechamel: 2 tbsp butter 2 tbsp flour 1/8 tsp nutmeg 2 cups milk 1/2 tsp salt to taste For the ragu: 1/2 pound sirloin 1/2 sweet onion diced 2 cloves garlic sliced 1 tsp Italian seasoning 1 tsp oregano Salt and black pepper to taste 6 oz. Tomato sauce 16 oz. Canned san marzano tomatoes 1/2 cup Parmesan Preparation: Start by slicing the veggies, thinner slices are recommended for quick roasting in the oven. Place in a bowl, season with salt, pepper and olive oil. Place on a baking sheet lined with foil and parchment for easy clean up. Roast at 385 degrees F until soft and a color starts to develop. You might want to flip the vegetables on the other side for even cooking half way through cooking. Meanwhile prepare the meat sauce, start browning the meat with the onion and garlic then add both tomatoes, season and let it simmer for 15 minutes. Prep the béchamel by cooking the butter and flour for 1 minute then add the milk slowly, season with salt and a touch of nutmeg if you like. Whisk at all times until it comes to a boil. Assemble the casserole, add the vegetables to the bottom of a baking dish add the meat sauce then the béchamel, top with the Parmesan and bake at 385 degrees F until golden and bubbling. Try making pistachio baklava using shredded kataifi dough and you’ll be addicted. It’s relatively easy to make if you follow all the tips on my channel and so worth a try. Ingredients: 225 g shredded kataifi dough previously frozen 450 g whole raw pistachios 1 tbsp sugar 1 tbsp rose water 226 g butter ghee For the sugar syrup, 2 1/2 cups granulated sugar 1/2 cup water 2 tbsp lemon juice 3 tbsp rose water Preparation: We’re using 9x3 inch shallow pan for this recipe. Start by defrosting the shredded dough. Spread 3 tbsp of the ghee in a 9x13 pan, add the shedded kataifi. Spread evenly. Mix your pistachios with 1 tbsp of sugar and 1 tbsp of rose water. Spread the whole amount and then add another layer of shredded kataifi dough. Cover well with a generous amount of ghee. Bake inside a bigger pan to avoid messes. Leave it in a 375 degree F oven for 30 minutes or until golden brown. Remove, flip on the other side, get rid of the extra ghee. Put back in the oven for another 10-15 minutes. It took 10 minutes in my oven and it was ready. Make the sugar syrup by adding the sugar, water, rose water and lemon juice, mix a little and bring to a boil, make sure all the sugar is completely dissolved. Turn off the heat and add the hot sugar syrup on top of the hot baklava. Wait for 3-4 hours before slicing to the size that you like. Remove the unsightly edges. I recommend a small square or diamond shape. The most moist additive chocolate cake is very possible and here it is INGREDIENTS: 4 large eggs 150 g granulated sugar / 3/4 cup 1 tsp vanilla extract 1/2 cup vegetable oil 1/3 cup milk 120 g cake flour 2 tsp baking powder 20 g dutch cocoa powder *for the hot chocolate sauce: 1 cup milk 1 cup heavy whipping cream 1/3 cup powdered sugar 2 tbsp dutch processed cocoa 50 g milk chocolate 50 g dark chocolate 70 g dark chocolate for decorating Preparation: Mix eggs and sugar for 5 minutes until it becomes thick and pale yellow. Add the vanilla, oil and milk then add all the dry ingredients. Mix until the batter comes together nicely. Add to a greased pan and bake 25-30 minutes. This baked potato recipe was the star of the show at last night’s dinner and here’s how you make it. You will need: 4-5 russet potatoes 220- 235 g each 100 g butter unsalted 100 g cream cheese 100 g cheddar cheese 2 spring onions 1/2 tsp red pepper flakes 1/2 tsp coarse black pepper Salt to taste Non stick foil paper Olive oil to brush the outside of the potatoes/ optional. Preparation: Mix the room temperature cheeses, add the onion, pepper flakes and black pepper. Don’t add salt yet. Set aside and clean the potatoes well. Make slits in each potato and season with salt. You can also brush with olive oil/ optional. Wrap with foil paper and bake at 400 degrees F for 1 hour. Check it out: To make nine fillo rolls you’ll need: *for the filling, 2 cups walnuts 2 tsp cinnamon 4 tbsp sugar 2 tbsp rose water Chop finely and set a side. ***for this particular recipe I used 2 cups of candied mix of walnuts, pecans and macadamia nuts. They are toasted sweet with a nice cinnamon flavor, but you can see the ingredients above and follow the instructions. nine fillo dough or 18 if you want to use 2 sheets per roll. One is enough in my opinion. 113 g unsalted butter melted *for the sugar syrup, 1 cup sugar 1/2 cup water 1 1/2 tbsp honey 1 tsp orange blossom water 1 tsp rose water You will not need the whole amount, sweeten to your liking.
