Crawfish Étouffée 🦞 🍛 (Recipe Below ⬇️)

Juicy crawfish smothered in a rich gravy with spices and herbs, served over rice. It’s huge on flavor and easy to make.

Ingredients:

4 tablespoons butter or use peanut oil
4 tablespoons all purpose flour
1 medium onion chopped
1 medium bell pepper, 1/2 red & yellow bell pepper chopped (I use jalapeno for spice)
1 stalk celery chopped
4 cloves garlic chopped
2 teaspoons Cajun seasonings or to taste
1 teaspoon cayenne pepper
2 tablespoons @louisiana_hot_sauce
Salt and pepper to taste
2 cups chicken stock or use seafood stock
1 pound crawfish tail meat par-cooked
1 pound andouille sausage chopped & browned
1 tablespoon chopped parsley
Garnish with chopped scallions

White Chicken Chili 🌶️ Flavorful White Chicken Chili made with hearty beans, tender chicken, and a rich and creamy broth. It’s a lighter alternative to traditional beef chili and makes for a super satisfying dinner! If you’re lucky to have any left it will make great leftovers for lunch the next day too. Salt & Pepper Shrimp 🦐 🌶️ (Recipe Below ⬇️) When I was a kid and now the first thing I’ve run to at the buffet are these salt and pepper shrimp. They are crispy, spicy, lemony, and they are easy to make ! My current favorite is @sushikingdom.dunwoody Ingredients: 1 pound u/15 shrimp (cleaned, deveined) 1 red and green jalapeño (sliced) 1 teaspoon salt 1 teaspoon @badiaspices lime pepper 1 teaspoon Chinese five spice 1 teaspoon red pepper flake 1 teaspoon turmeric 1 teaspoon granulated sugar Breading: 1 cup all purpose, flour 1 cup cornstarch @clabbergirlbaking (You can sub for a gluten-free alternative) Instructions: 1. Clean and devein 1 pound of U/15 shrimp. Mixed together one cup of all-purpose flour and cornstarch. 2. Add half your seasoning to the breading mixture , toss your shrimp in a mixture and one evenly coated it set aside for about five minutes to allow the breading to set. 3. Fry the shrimp in 350° oil for about 4 1/2 minutes and allow to rest (be mindful that the shrimp is still cooking after it comes out of the oil). 4. In a large sauté pan. I’m using my @hexclad wok, add a drizzle of oil from the shrimp and sauté four cloves of garlic, half of a white onion, and one small, red and green jalapeño. Season to Taste !
