HIGHER IN PROTEIN BANANA BLUEBERRY MUFFINS
If you have some ripe bananas that need to be used up, make these higher in protein banana blueberry muffins. A perfect grab-and-go breakfast or snack idea for your week.
Makes 12 muffins:
3 large eggs
2 ripe bananas
1 tsp vanilla extract
1/4 cup melted refined coconut oil
1/4 cup maple syrup
1 cup whole milk cottage cheese
1 1/4 cup gluten free all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 cup blueberries coated in flour
Instructions:
1. Preheat oven to 350 F
2. Blend all the wet ingredients in a food processor or high powered blender until smooth
3. Add the dry ingredients and mix with a spoon
4. Coat your blueberries in some extra flour
5. Fold in your blueberries
6. Add to lined muffin tin
7. Optional: top with a few more blueberries on top
8. Bake for 15-17 minutes or until toothpick comes out clean
9. Let rest for 5-10 minutes and enjoy

Meatloaf Muffins Makes 10 muffins Meatballs: 1 lb ground turkey or any ground meat you prefer 1-2 Tbsp olive oil 1/2 cup gf panko bread crumbs 1/3 cup diced red bell pepper 1/3 cup diced yellow onion 1 large egg 2 tsp worchestire sauce 1 Tbsp ketchup 1 Tbsp spicy brown mustard Salt + pepper to taste 1/2 tsp Italian seasoning 1/2 tsp garlic powder Topping: 1/2 cup ketchup 2 Tbsp hot honey Salt + pepper to taste Instructions: 1. Preheat oven to 400 F 2. To a medium pan on medium heat add olive oil and warm through. Add the diced onions and red bell pepper, saute until onions are caramelized. Remove from heat and let cool. 3. To a large bowl add everything for the meatballs, and gently mix. Don’t over mix just mix enough to incorporate it all. 4. Using a 1/3 measuring cup, scoop out meat mixture, and add to greased muffin tin, you can gently pat together 5. Whisk everything for the topping in a small bowl and top each muffin with topping 6. Bake for 25 minutes let cool for 5 minutes in tin 7. And they will be asking you for the recipe after trying this one🤤 Higher in protein spinach and artichoke dip 1 cup full fat cottage cheese 1/2 cup Greek yogurt 2 Tbsp avocado oil mayo 2 tsp worcestershire sauce 1 1/2 tsp onion powder 1 1/2 tsp dried basil Salt + pepper to taste 3 garlic cloves minced 8 oz frozen spinach defrosted and water squeezed out 4 oz finely chopped water chestnuts patted dry 5 oz chopped artichokes liquid drained 1/4 cup shredded Jack cheese + 2 Tbsp for topping 1/4 cup shredded Havarti cheese + 2 Tbsp for topping 1/2 cup shredded pecorino Romano cheese + 2 Tbsp for topping Instructions: 1. Defrost your frozen spinach and ring out excess liquid using a mesh bag or paper towel 2. Finely chop your water chestnuts and pat dry so there isn’t any excess liquid. 3. Drain your artichokes and pat dry and give a rough chop 4. They are super easy to prepare, require only a hand full of ingredients, and are so delicious. Be sure to save this one for later, they can be made year round! Reese’s Peanut Butter Hearts: 1 cup organic peanut butter (substitute any nut or seed butter) 1/3 cup + 2 Tbsp coconut flour 1/4 cup maple syrup 1/4 cup melted refined coconut oil 2 tsp vanilla extract Pinch of salt 1/2 cup no sugar added chocolate chips 1/2 cup white chocolate chips 2 tsp refined coconut oil for melting chocolate Instructions 1. Mix peanut butter, maple syrup, melted coconut oil, vanilla extract in bowl until smooth and combined 2. Add in coconut flour, salt, and mix 3. Refrigerate the dough for 30 minutes 4. Add dough to greased heart molds and freeze for 10-15 minutes 5. Melt chocolate and white chocolate in separate bowls with 1 tsp coconut oil for each 6. Using a fork, dip hearts in melted chocolate, and tap off excess chocolate, and add to a lined baking sheet. 7. Transfer to freezer to let chocolate harden 8. Air Fryer Chicken Piccata Meatballs: Makes 12 meatballs Meatballs: 1 lb ground chicken 1 large egg 1/2 cup GF panko bread crumbs 1/4 cup fresh diced cilantro 1 lemon zested 1/4 cup freshly grated Parmesan cheese (substitute dairy free cheese) 1/4 cup diced yellow onions 4 garlic cloves minced Salt + pepper to taste Sauce: 1 cup chicken bone broth 1 1/2 Tbsp GF flour (I used tapioca flour) 1/4 cup hot water 4 Tbsp butter (substitute dairy free butter) 4 garlic cloves minced 1/4 cup capers with some of the juice 1 lemon juiced Instructions for meatballs: 1. Add all the ingredients for meatballs to a large bowl, mix, and form into 12 meatballs 2. Add meatballs to lined air fryer dish (I cooked in two batches) 3. Cook on 400 for 15 minutes Instructions for sauce: 1. To a medium pan on medium heat add butter and warm through until butter is melted 2. Add minced garlic and sauté a minute or so, careful not to burn 3. Add chicken bone broth and heat through 4. To a bowl add hot water and flour, whisk until smooth (I used my handheld frother to get smooth) pour into the pan and whisk to combine 5. Add capers, lemon juice, and whisk until sauce thickens 6. Add your cooked meatballs and coat the meatballs with the sauce, and lower heat to a simmer until ready to enjoy 7. Add some sliced lemons for garnish 8. That is loaded with nourishing ingredients you can feel good about eating. And it makes for a great prep ahead meal to have ready to go for your busy work week. Pasta e Fagioli Soup: 1 lb grass fed ground beef 1-2 Tbsp olive oil 3 carrots diced 4 celery stalks diced 5 garlic cloves minced 1 small yellow onion diced 1 tsp dried oregano 1 tsp Italian seasoning 1/2 tsp dried basil 1/2 tsp dried thyme 2 bay leaves Salt + pepper to taste 3 cups beef bone broth 1 1/2 cups marinara sauce of choice 1 can fire roasted tomatoes 15.5 oz organic dark red kidney beans 13 oz organic cannellini beans 1 1/2 cups dried Ditalini pasta Instructions: 1. Cook your pasta according to package but cook 1-2 minutes less. Once done rinse under cold water and set aside 2. To a medium pot add olive oil on medium heat 3. Add diced onions, carrots, celery, a little bit of salt + pepper, and saute for 5-7 minutes 4. Add in minced garlic and seasonings and cook a minute or so 5. Add ground beef a little more salt and pepper, break up with spoon, and cook until no longer pink 6. Add beef bone broth marinara sauce, fire roasted tomatoes, beans, mix, add two bay leaves 7. Cover and simmer for at least 30 minutes 8. When ready to enjoy add in your cooked pasta and enjoy 9. Note: the pasta will suck up a lot of the broth, so if you want to reserve the pasta on the side for leftovers I would suggest. Made with a delicious and easy homemade raspberry chia jam. These cookies are refined sugar free, dairy free, and grain free ✔️ Grain Free Raspberry Heart Thumbprint Cookies: Makes 12 cookies: Cookies: 2 cups almond flour 1 egg (sub flax egg) 1 Tbsp maple syrup 1/3 cup refined coconut oil melted and cooled 1/4 tsp salt 1 tsp baking soda Raspberry chia jam filling: 1 1/2 cup fresh raspberries 1/4 cup water 1/2 lemon juiced 1 Tbsp lemon zest 1-2 Tbsp maple syrup 1 tsp vanilla extract 1/4 cup organic chia seeds Cookie instructions: 1. Mix wet ingredients in medium bowl 2. Add in dry ingredients and mix 3. Refrigerate the dough for at least 30 minutes 4. Roll into balls, with your thumb or a 1/2 tsp press down diagonally one way and then the other way to form a heart 5. Bake 350 F for 8-10 minutes and once done let cook for minutes before transferring to a wired cooling rack. If the heart indentation disappears you can press in the 1/2 tsp spoon to reform the heart. Raspberry Chia Jam Instructions: 1. Add raspberries, water, maple syrup, lemon juice, lemon zest, to a small pan on medium low heat 2. Mash up the berries with back of spoon and cook down for 2-3 minutes 3. Add the chia seeds, reduce the heat to a simmer, and let simmer for about 5 minutes, mixing throughout 4. Turn off the heat and mix in the vanilla extract. Let the chia jam cool for 10-15 minutes Filling The Cookies Instructions: 1. Once cookies cool, add 1 Tbsp of the raspberry chia jam filling and form the heart with the chia jam 2. Store cookies in an airtight container in refrigerator. Added to a bowl with greens, instant pot bone broth rice, roasted corn, black beans, red bell pepper, avocado, cottage cheese. 4. Air fryer baked potatoes poke holes in potatoes, brush avocado oil all over potato, sprinkle salt, air fry on 400 F for 30 minutes each side. Top with cottage cheese, garlic + herb butter, and green onions. Season top sirloin steak with salt, pepper, steak seasoning, olive oil, let come to room temperature. Sear steak in pan on medium high heat with butter for a couple minutes each side. Then transfer to oven cook on 450 F for 5-6 minutes or until you reach your desired doneness.
