The secret is black salt, which provides an extra pop of flavor and the familiar sulfurous aroma synonymous with eggs. #MeatlessMonday Ingredients 250g tofu, pressed 1/4 tsp turmeric 1/4 tsp paprika 1/4 tsp garlic powder 1/4 tsp kala namak black salt 2 tbsp nutritional yeast 100ml oat milk 1/2 tbsp vegan butter 2 slices wholemeal bread Recipe: 1. Once the tofu is pressed crumble it into small chunks 2. Add the vegan butter to a frying pan and cook the tofu on medium heat for 7 minutes 3. Meanwhile add the turmeric, paprika, garlic powder, kala namak, nutritional yeast and oat milk to a bowl. Mix everything together 4. One the tofu is cooked add the sauce to the pan and cook for a further 60 seconds 5. Serve on two slices of toast. Finish with a sprinkle of kala namak and a crack of pepper. And, yes, we encourage you to lick the bowl. #MeatlessMonday BROWNIE BATTER 3/4 cup creamy peanut butter 1/3 cup + 1 tbsp maple syrup 1/4 cup coconut oil, melted & cooled 1 tsp vanilla extract 1/2 cup cocoa powder 1/2 cup + 3 tbsp almond flour 1/3 cup mini vegan chocolate chips (but honestly I measure with my soul) Pinch sea salt CHOCOLATE 1/2 cup chocolate chips 2 tsp coconut oil Flaky sea salt for topping Line a quarter baking sheet with parchment paper. In a medium bowl, mix together the peanut butter, maple syrup, melted & cooled coconut oil, and vanilla extract until smooth. Add in the almond flour. Sift the cocoa powder into the bowl, and add a pinch of salt. Mix to incorporate. Fold in chocolate chips. Transfer the brownie batter to your prepared baking sheet and pack it down using a spatula and your hands into a rectangle-ish shape about 1/4-1/2 inch thick. In a separate bowl, melt the chocolate chips and coconut oil together in your microwave in 15 second increments, stirring between intervals until completely glossy and smooth. Pour melted chocolate on top of the brownie batter and smooth until even, over the entire surface area of the brownie batter. Add flaky salt on top and place in the freezer to set for about 30mins or until the chocolate has hardened. ·1-9We’re wagging our tails because this recipe from @frasercooks is bao wow wow. The slabs of crispy tofu are the perfect complement to the light and airy bao buns. Top it off with sriracha mayo, crunchy scallions, and cucumber for the ultimate appetizer. #MeatlessMonday Ingredients 1/2 brick of extra firm tofu, cut into slabs 1/2 cup corn starch 2 tbsp soy sauce 2 tbsp seasoned rice wine vinegar 1/4 cup oat milk 1 cup bread crumbs 1 tbsp sesame seeds 1/2 cucumber, sliced into thin matchsticks 1 tbsp seasoned rice wine vinegar 1/2 bunch of green onions, sliced into thin matchsticks 1/2 cup mayo 2 tbsp sriracha 1 lime, juiced 6 bao buns Roughly chopped cilantro, for garnish 1 tbsp fermented chilis (optional) Vegetable oil for frying Method 1. In a bowl, combine corn starch, soy sauce, 2 tbsp seasoned rice vinegar, and oat milk. In a separate bowl, combine the bread crumbs and sesame seeds. 2. In a large, heavy pan, add enough vegetable oil so you can easily shallow fry the tofu. About 4 cups depending on the size of the pan. Heat the oil over medium heat until it reaches 350-375F. To test if it’s hot enough, place a pinch of bread crumbs in the oil. If it starts bubbling instantly, then it’s ready. 3. Prep the tofu by placing a slab in the corn starch mixture, then in the bread crumbs, then repeat again and carefully place in the hot oil. Shallow frying until golden brown. Flip and fry until golden all over. Remove and place on a cooling rack. Repeat with the rest of the tofu. 4. Add the sliced cucumber into a bowl and add 1 tbsp rice wine vinegar and mix to quick pickle the cucs. Add the sliced green onions in a bowl of ice water to get crisp. 5. In a bowl, combine the mayo, sriracha, and lime juice. Set aside. 6. Bring a pot with 2 inches of water to a steam. Place a steamer basket on top and steam the bao buns according to the package directions. Once cooked, remove and build the sandos!

Gyro:
1 can (15 oz) chickpeas, drained and rinsed (24.5g protein) 1 tbsp olive oil 2 tsp smoked paprika 1 tsp garlic powder 1 tsp dried basil leaves Salt and pepper to taste 3 high-protein pita breads (18g protein) Fresh parsley for garnish
Vegan Tzatziki:
½ large cucumber, grated 1½ cups vegan yogurt, unsweetened, coconut or soy 1 cup extra firm tofu (14g protein) 3 cloves garlic ¼ cup fresh dill, chopped 2 tsp salt (add more if you like saltiness) Black pepper to taste Olive oil, to serve, optional
Cooking Method:
Gyros: 1. Prepare Chickpeas: Preheat your oven to 400°F (200°C). In a bowl, toss the drained chickpeas with olive oil, smoked paprika, garlic powder, dry basil leaves, salt, and pepper until well coated. 2. Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast for 20-25 minutes or until crispy, shaking the pan halfway through for even cooking. 3. Warm Pitas: While the chickpeas are roasting, warm the pita bread in the oven or on a skillet for just a minute or two until soft. 4. Assemble Gyros: Once the chickpeas are done, take a pita, spread a generous amount of vegan tzatziki inside, then fill with roasted chickpeas and your choice of sliced cucumbers and/or red onions. 5. Serve: Garnish with fresh parsley and additional tzatziki if desired. Enjoy your high-protein chickpea gyros!
Vegan Tzatziki: 1. Using a box grater, grate the cucumber to get around 1 cup and set aside. Chop some fresh dill and set aside. 2. In a blender, combine the vegan yogurt, tofu, and garlic. Blend until you achieve a thick, Greek yogurt-like consistency. 3. Transfer the mixture to a bowl, and mix in the fresh dill, salt, black pepper, and cucumber.
