Timing to dry differs & traditionally they are hung at room temperature. However as the climate I in is hot & humid I am aging it in a dry ager instead. Ingredients Meat 2kg (mix of shoulder & belly) Salt 30g Sugar 100g Soy sauce 30g Whisky 60g Chinese wine 30g Soy Sauce 30g Fish sauce 30g Pepper powder 1 tsp Red rice powder 8g 1. ·5d ago How to make a 10 minute Strawberry Daifuku Felt inspired to make a simple dessert with the strawberries I got. Did not do the best job with rolling the mochi & berries but I feel it just goes to show how easy & fail proof this recipe is. Ingredients Mochi dough Glutinous Rice Flour 3/4 Cup Sugar 1/4 Cup Water 3/4 Cup Corn starch as needed Canned red beans Strawberries 1. Mix ingredients for mochi dough & microwave for 1 minute 2. Stir & microwave for an additional 30s 3. Stir & check if a soft supple dough has formed. (Microwave for an extra 30s if its too wet) 4. Roll dough out with corn starch & let it cool down completely 5. Cut dough & roll with smashed red bean paste together with strawberries. #strawberry #daifuku #easyrecipe #valentinesday

·6d ago Cutting into a $1000 Dry Age op rib & cooking it. Had a slight change in plans where instead of letting it dry age a full 45 days straight, the advice given is to try half of the op rib at 30 days & see if I want to dry age it more. Currently, while there is a difference in flavour straight out of the packet 1 month ago, I feel the beef can have a stronger funk flavour hence I will try this again in 15 days time. ·2-12How to sear scallops & make a quick miso lime sauce to pair with it. It’s really important to use high quality scallops that are sashimi grade when cooking to a medium doneness. If you do not have access to high quality scallops, baste them in butter till fully cooked instead. Ingredients Sallop 5 Pc Oil Salt Butter 1.5 tbs Thyme 1 Sprig Shallot 20g Cream 100g Miso 1tsp Lime Juice 1 tsp Chives Chervil Herb oil (optional) 1. Heat pan till smoking, add oil and sear scallops on both sides seasoning lightly 2. Add butter in with thyme & cook scallops in butter until desired doneness 3. Remove scallops & thyme. 4. Add shallots in & sweat on low heat for 1 min 5. Add cream in together with miso and bring to a simmer 6. When sauce thickens, add lime juice in 7. To plate, pour sauce over scallops and garnish with herbs. * make sure scallops are very very dry to avoid splattering & sticking to the pan. #scallops #howtocook #easyrecipe #valentinesday #valentinesday2025
