Repost of my viral Double Chocolate Espresso Sourdough☕🍫 Ingredients: - 100g active, bubbly starter - 325g warm water - 4 tbsp fresh brewed espresso (cooled) - 50g brown sugar - 30g cocoa powder - 470g bread flour - 11g salt - 1 tsp ground cinnamon - 100-180g dark chocolate chips Instructions: 1. Brew espresso first so it has time to cool. 2. In a large bowl, mix warm water, espresso, brown sugar, and cocoa powder. Let sit 2-5 min to let the cocoa bloom. 3. Add starter and mix. 4. Add flour, salt, and cinnamon. Mix until a shaggy dough forms. Use wet hands to fully combine — no dry spots! Let rest for 35 min. 5. Stretch and fold: Wet your hands and do a set of stretch and folds. Cover and rest 30 min. 6. Coil folds: Repeat with wet hands. Cover and rest 30 min. 7. Final coil fold: The dough should be smoother now. Let it bulk ferment on the counter for 4-12 hours — look for larger bubbles and a domed top. 8. Shape the dough: Flour your surface, stretch the dough into a rectangle, sprinkle chocolate chips evenly, then fold sides to the middle and roll into a ball. 9. Place the dough top-side down into a floured tea towel-lined bowl. Cover and cold proof in the fridge for 12-48 hours. 10. Bake: Preheat oven to 500°F for an hour. Turn the dough onto parchment paper, flour and score as desired. 11. Place into a Dutch oven, reduce heat to 450°F, and bake 40 min with lid on. 12. Remove lid and bake 15 more min or until the crust is your desired color. 13. Ingredients: Dry: - 270g all-purpose flour - 2 tsp baking powder - 1/2 tsp baking soda - 8g salt - 170g granulated sugar Wet: - 170g milk - 80g melted butter - 60g sour cream - 20g vanilla extract - 2 eggs - 130g sourdough discard - 15g honey Add-ins: - 160g guava paste, cubed and lightly coated in flour - 180g cream cheese chips Streusel Topping: - 3 tbsp melted butter - 1/4 cup granulated sugar - 1/2 cup all-purpose flour Guava Drizzle: - 80g guava paste - 160g water Instructions: 1. Prepare the streusel: In a small bowl, mix melted butter, sugar, and flour with a spatula until clumps form. Set aside. 2. Cube the guava paste: Cut the guava paste into small cubes, tossing them in a bit of flour as you go. This keeps them from sticking together and helps prevent them from sinking to the bottom of the muffins. 3. Mix the wet ingredients: In a large bowl, whisk together milk, melted butter, sour cream, vanilla, eggs, sourdough discard, and honey. 4. Combine the dry ingredients: In another bowl, whisk together flour, baking powder, baking soda, salt, and sugar. 5. Bring it together: Gradually add the dry ingredients to the wet, stirring gently until just combined — don’t overmix! 6. Fold in the magic: Gently fold in the floured guava cubes and cream cheese chips. 7. Scoop & top: Use an ice cream scoop to portion the batter into cupcake liners. Sprinkle each muffin with the streusel topping. 8. Bake: Bake at 365°F (185°C) for 25 minutes or until golden brown and a toothpick comes out clean. 9. Make the guava drizzle: While the muffins cool, add guava paste and water to a small saucepan over medium heat. Bring to a simmer, stirring until the guava melts and the mixture thickens slightly.
