I am bursting at the seams to tell you all about my little project I've been working on. I say little, it's taken me about two years and now it's finally here!! This truly has been a labour of love and every single recipe I've developed for this book is just as special as the last. All created from different areas of my life, inspired by every country under the sun, making them just really bloody delicious. I cannot thank you all enough for the support I've had throughout the years, from those of you who watched my silly Instagram lives in lockdown to the immense community of fantastic food lovers I've got, who keep letting me make some frankly very silly videos to my heart's content. I am so grateful I get to do this as my job and share it with so many wonderful people. I'll be obviously sharing lots of sneak peeks of recipes and chewing your ear off about it. So if you wanna give it a preorder I would really appreciate it! The more preorders I get means that I can reach more bookshops and audiences on publication day (which can help me to become a bestseller eek!!!) And don't worry the money doesn't come out until publication, and you will only be charged the LOWEST price of the book! Happy boxing day everyone :) here is little vlog of my big family Christmas! I was honestly obsessed with @justine_snacks thanksgiving vlog and thought it would be fun to show you my own version since it was all very last minute. Also as an FYI each of my cousins brought a couple of dishes! I would 1000% recommend spitting up the workload it saves a lot of stress in the big day :) The recipes I used - spiced christmas lamb (on my website) - chilli jam pigs in blankets (on my website) - miteshs famous lamb chops (there is my version in my book (pg 171) - Brussels sprouts salad (on my website)

My ghee and turka roast potatoes new and improved. Deliciously nutty garlicky ghee with lots of crunchy curry leaves on top. The ultimate tandoori turkey (2.0). You get moist flavourful turkey in HALF the time and insanely delicious gravy that you could quite literally drink my the glass. It’s part of my Indian Christmas dinner series so stay tuned because I’ve got a whole week of Christmas specials :) All my plates and crockery were kindly lent to from @the_social_kitchen !! They are fantastic for when your hosting a special dinner ❤️❤️ Dry Brine: Large handful of sea salt 1 tbsp brown sugar Tandoori Butter: 1 tbsp yogurt 4 tsp chili powder ½ tsp turmeric 2 tsp ground cumin 2 tsp ground coriander 1 tsp methi / dried fenugreek (optional) 10 cloves garlic 6 cm knob of ginger ½ white onion 10–12 finger chilies 150 g butter To Cook the Turkey: 4 large white onions 1 bulb garlic, peeled 200 ml water For the Gravy: 1 tbsp butter 2 tbsp flour 2 tbsp gravy granules (e.g., Bisto Best Chicken Gravy) For the full recipe please see my website seemagetsbaked.com

This is that dessert I made for Diwali, a mix between a tiramisu, tres leches and all drowned in chai and saffron cream Thank you @Rish | DishbyRish for the great idea to use cake rusks!! Check his recipe out for a EGGLESS chai tiramisu! 10 tea bags 30g ginger 15 cardamon pods 1/2 tsp black pepper 4 cloves 1 cinnamon stick 150ml evaporated milk 100g white sugar 250 g mascarpone cheese 250g cream cheese (or marcapone)

100 g granulated sugar A large pinch saffron 2 ice cubes 24 cake rusks or tiramisu lady fingers 100g pistachios, finely chopped First make the extra strong chai. bash up the spices in a pestle and mortar just until crushed. Add to a large pot with the tea bags and 1 litre of water. Cook this on high for 20 mins with the lid off, it should reduce by half. Add the evaporated milk and sugar continue cooking for 10 mins. Allow to cool complete in the pan and then strain - you want about 600ml of liquid, top it up with more evaporated milk or water if you need more liquid. Meanwhile grind the saffron with 1tsp of the sugar, add a few cubes of ice and let this melt at room temp. Separate the whites and the yolks. In a clean bowl whisk the whites with half the sugar until you get stiff peaks. Then whisk the yolks with the remaining sugar until pale and thick - to the ribbon stage. Add in the mascarpone and cream cheese then continue to beat until thick and creamy. Add in the melted saffron and mix well. Using a spatula fold in half of the egg whites, then repeat with the other half of the whites until well incorporated but still light. Add 1/4 tsp salt and fold in. Lay out the cake rusks on to one layer in your tray and pour over half the chai mix - allow the cake rusks to absorb the liquid and add a little more so they are in a pool of chai. Top with half of the saffron cream and then top with the remaining cake rusks. Gently pour over the chai and finish with the remaining cream. Top with the chopped pistachios. Best served after refrigerating for 3 -4 hours.

DAY 99 of 197 is Ecuador with my beautiful Bhabhi (cousin's wife) @dianacflores86 I never thought I would enjoy tuna soup and crossiant as much as I did but here we are and its delicious. Its thick and so well seasoned, its not fish and just tastes really hearty. Diana said the closest she can find to the traditional bread in the UK was croissants and frankly its fantastic Serves 2 220g Tuna Albacore steaks 1 ⁠yuca/cassava/Mogo (small-average size ) 2 tomatoes 1 small green pepper 2 red onions 4 cloves ⁠garlic 3cm knob ginger 1 tsp ground cumin 1/4 tsp chilli powder one large bunch coriander one small bunch ⁠basil 1 tsp ⁠dried oregano To serve: Crunchy toasted corn croissants 1-2 each salted plantain chips Limes Full recipe on my website soon (its too long to fit here!) #ecuador #encebollado #tunasoup #ecudaorianfood #southamerica #southamericanfood #nationaldish
