Romanian Coliva traces its origins back to ancient times, with its roots intertwined with religious and cultural practices. Originally associated with Orthodox Christian traditions, Coliva has long been prepared and offered as a symbolic dish during memorial services, commemorations, and religious festivals. The dish holds deep spiritual significance, symbolizing the cycle of life, remembrance of the departed, and the hope of resurrection 🙏

It’s defining characteristic is the tangy flavor from zakwas – a fermented rye starter made with just water and rye flour. This starter has been a cornerstone of Polish cuisine for centuries, with mentions of sour soups dating back to medieval times. Zurkek’s origins are humble. It was a peasant dish designed to stretch simple, affordable ingredients. Over time, it became a staple during Lent, as it’s hearty ingredients provided sustenance during the fasting season. Today, Zurek is synonymous with Easter, often served as the centerpiece of the holiday meal, accompanied by hard-boiled eggs and white sausage (biala kielbasa). While Zurek is uniquely Polish, its concept has inspired variations across Central and Eastern Europe. In Slovakia, a similar dish called kysla polievka used fermented wheat or barley. In the Czech Republic, a sour soup called kulajda incprorates cream and dill for a slightly sweeter flavor. In Belarus and Ukraine, you’ll find kyselytsia, a tangy soup made with fermented oat or rye flour. Bring this Roasted Potato Salad to your next outdoor adventure! It's easy to make, delicious to eat, and guaranteed to be a hit with your picnic family or friends 🧺💚 Made with love and fresh ingredients, this vibrant salad is packed with flavor and nutrients: For the Roasted Potatoes: 🥔 4 large potatoes, skinned 🥔 Salt 🥔 Ground black pepper 🥔 Dried thyme 🥔 Dried rosemary 🥔 Smoked paprika 🥔 Olive oil or avocado oil Drizzle the potatoes with olive oil until evenly coated and mix with the herbs and spices. Roast in an oven uncovered at 400° F for 40 minutes, and flip occasionally to brown on all sides. Remove and let them cool over a drying rack to retain their crispiness. For the Salad: 🥗 4 diced roasted potatoes 🥗 2/3 cup of unsweetend, whole corn kernels 🥗 1/3-1/2 cup of homemade mayo or store bought 🥗 3 finely chopped green onions stalks 🥗 1/4 cup of finely chopped cilantro, dill, or parsley 🥗 1/4 cup of red onions for garnish In a Salad bowl, add all of the ingredients and gently mix together. Our Saturday night dinner 💙 Greek Meat Sauce Spaghetti, known as Makaronia Me Kima 🇬🇷 This is one of my favorite comfort foods!! Herring Fur Coat Salad 🥗 This is a delicious and beautiful salad layered with root vegetables, herring, homemade mayo, and eggs Since the era of the Babyloanians, we've always enriched raw or cooked vegetables with what they had in the environment (like oil, nuts, and salt). Dressing our salads with a variety of flavors led to signature salads such as the Caesar salad, Greek salad, tabbouleh, coleslaw, korean lettuce salad, and waldorf salad But did you know you can also dress a salad with a fur coat? 😉 This Slavic salad has an appearance of being warmly encased in a fur coat, called Shuba, and it is served to celebrate the holidays, including Easter, New Years, or Christmas. The salad is traditionally layered with soft potatoes, beets, carrots, marinated herring, onions, mayo, and eggs This salad is full of flavor and can be a beautiful piece for the dining table after it is decorated. It is easy to make and needs some time to settle all the flavors in the fridge overnight. I highly recommend making this the night before dinner the next day. The term “schnitzel” refers to a thin slice of meat that is coated in breadcrumbs and fried until golden brown and crispy. While veal is traditionally used in the classic Wiener Schnitzel, variations using pork, chicken, or even fish have become popular over the years If you have any leftover schnitzel, you can store it in an airtight container in the refrigerator for up to 2-3 days.
