Crispy Black Bean Tacos with @Eat Figs Not Pigs đŸ€— #veganrecipes INGREDIENTS: ‱ 1 (15-ounce) can of black beans, drained and rinsed ‱ 4 cloves garlic ‱ 1 chipotle in adobo sauce, optional ‱ 1 tsp each: cumin, ancho chili powder ‱ Âœ tsp each: salt, pepper, garlic powder ‱ ÂŒ tsp cayenne powder, optional ‱ Vegetable oil, for frying ‱ 6 tortillas ‱ Âœ cup shredded cheese ‱ Shredded lettuce ‱ Salsa or Pico de Gallo ‱ Fresh lime wedges, for serving, optiona Place the black beans, garlic, chipotle pepper, and seasonings in a food processor, and pulse until smooth. Taste and adjust seasonings, if necessary. Spread a few tablespoons of the black bean mixture into each tortilla, followed by 1 to 2 tablespoons of the cheese. Fold in half and set aside. Heat a couple teaspoons of the oil in a large nonstick skillet over medium heat. Working in batches, fry the tacos until golden and crispy, 2 to 3 minutes per side. Fill each taco with lettuce and serve with your favorite salsa and fresh lime wedges, and enjoy!

INGREDIENTS: 3 TBSP olive oil 1 finely diced onion 20 ounces potato gnocchi 1 1/4 cup cherry tomatoes, diced 2 TBSP tomato paste 1/3 cup heavy cream 4 garlic cloves, minced 1/2 tsp crushed red pepper flakes 2-4 burrata cheese balls (cashew cheese can be substituted for vegan) Fresh basil as desired salt + pepper RECIPE Heat up your large skillet or Goodful deep cooker, pour in olive oil and swirl until it coats the bottom of the pan. Add in diced onions and garlic. Saute on medium heat until caramelized. In a separate pot, bring water to a boil and add in gnocchi. While the gnocchi is cooking, add cherry tomatoes, tomato paste, heavy cream, red pepper, salt, and pepper to the onions and garlic. Let them cook, occasionally stirring, for about 10-15 minutes or until the tomatoes are soft. When the gnocchi is done, drain it and add it the rest of the ingredients in the skillet. Complete the recipe by adding the burrata cheese and fresh basil. Enjoy!

We love making one-pan meals in our favorite Goodful non-stick pan!Grab it in our bio @Krista Torres đŸ„˜ INGREDIENTS: About 2 cups of sweet potatoes 4 TBSP Olive oil or butter 1 cup rice 1 tsp chili powder 1 tsp garlic powder 1 tsp cumin Salt + pepper to taste 1 can fire-roasted tomatoes 1/2 can rinsed black beans 1/2 can Southwest style corn 2 cups vegetable broth Sliced bell peppers as desired 1 cup sharp cheddar cheese (or vegan substitute) Recipe: Peel sweet potatoes and chop into small pieces. In a large frying pan, over medium heat add in the olive oil and sweet potatoes. Stir until potatoes are browned on the outside (about 10 minutes). Then, add in the rice, stirring and browning it for about 5 minutes. Add in the remaining ingredients and then reduce the heat to medium-low. Cover for about 15 minutes or until the rice fully cooks. Then add in the cheese, mixing until it melts. Top with cilantro, avocado, and whatever other toppings you desire — it's SO good!

Cauliflower Potato Soup Recipe: INGREDIENTS: đŸ„” Half a yellow onion, diced đŸ„” 1 TBSP olive oil đŸ„” 1 head of cauliflower, chopped đŸ„” 1 lb russet potatoes, peeled and cubed đŸ„” 3 cups chicken broth (or vegetable broth) đŸ„” 1 TBSP butter đŸ„” 1 cup heavy whipping cream đŸ„” 1 cup shredded cheddar cheese đŸ„” 1/2 cup chopped green onions đŸ„” 1 tsp smoked paprika đŸ„” salt + pepper to taste RECIPE: 1. Heat olive oil in large pot over medium heat and add in chopped onions, sautĂ©ing for 5 minutes. 2. Add in cubed potatoes, chopped cauliflower, and broth. Turn up to high heat until it boils, then reduce to medium and cover for 25 minutes or until both potatoes and cauliflower are fully cooked. 3. Add in heavy whipping cream and pour mixture into a blender, blending until ingredients are smooth. 4. Pour mixture back into pot over low heat, adding in butter, seasonings and shredded cheese. Once melted, serve garnished with green onion.
