I first learned this method of cooking with a rice cooker when I would see my grandma making her lunch for work in the mornings. It’s so easy and perfect for college students or anyone who doesn’t want to turn on a stove.
This method works especially well for seafood and I love to use shrimp or salmon! You can use whatever veggies you prefer but in this video I used bok choy, kale, shitake mushrooms, and carrots.
You’ll need:
- 1 tbsp miso
- 1 tbsp honey
- 3 tbsp melted butter
- 4 oz shrimp
- veggies of your choice
- 1 lemon sliced
Here’s how to make it:
• Mix together the miso, honey, and melted butter.
• Coat the shrimp and veggies in the marinade.
• Add water to the rice cooker pot and set to cook.
• While the water is coming to a boil, place all the veggies and lemon slices on a large piece of foil then fold the edges and seal to form a steaming pouch.
• Once the water is boiling, place the rice cooker steaming basket in, add the foil pouch, and cover with a lid. Cook for about 10-15 minutes until the shrimp is cooked thoroughly
