Chicken Milanese

Chicken Cutlet
• 1 lb. thinly sliced chicken breasts
• 1 c seasoned breadcrumbs
• 1⁄2 c half and half
• 1 tsp of each (salt, pepper, Italian seasonings)
• 1⁄2 tsp garlic powder
• Olive oil – enough to coat the bottom of your pan
• 2 tbsp butter

Dressing
• 1/3 c red wine vinegar
• 1/3 c EVOO
• 1 tsp dried oregano
• Salt & pepper
• 1⁄2 red onion, thinly sliced
• 1 c cherry tomatoes, quartered

Salad
• 1 package arugula
• Lemon, cut into wedges
• Parmesan Cheese
• Dressing

Instructions:
To make the dressing/salad:
1. Add the red wine vinegar to bowl, add dried oregano. Mix together.
2. Whisk in olive oil. Season with salt and pepper to taste.
3. Stir in red onion and tomatoes.
4. Let sit at room temp.
When ready to eat, combine washed and dried arugula with the dressing by adding one spoonful at a time until lightly coated. Top with freshly sliced parmesan cheese.

To make the chicken:
1. Season with the seasoning blend.
2. Add chicken to a bowl, pour over half and half and mix until coated.
3. In a separate bowl, add the seasoned breadcrumbs.
4. Coat chicken in breadcrumbs.
5. Repeat until all chicken is breaded.
6. Heat skillet on medium. Add olive oil and butter.
7. Add 2-3 pieces of chicken to pan, don’t overcrowd. Cook until golden, about 5-7 minutes a side.
8. Remove cooked cutlets to a paper towel lined plate.
9. Season with salt. Set aside until ready to serve or can keep warm in a 200-
degree oven.

Plate the chicken, dress the arugula and pile on top of chicken. Serve with a fresh squeeze of lemon and enjoy!

Pesto Pasta Salad 1lb of refrigerated cheese tortellini 1 pint of cherry tomatoes, halved and drained 1 1/2 cups pesto 2 8 oz. containers of ciliegene fresh Mozzerella Salt and pepper to taste Boil the pasta. Half the tomatoes and add into a colander. Sprinkle with a teaspoon of salt and let sit for 20 minutes. This will help the water to drain from the tomatoes. Once the pasta has cooked, drain and rinse with cool water. Add to a large bowl. Add pesto, tomatoes and mozzarella. Stir well, season with salt and pepper. Refrigerate until ready to serve.

An easy treat to take on the way to work or school to make Here's what you'll need: 1 1/2 cups four 1/2 cup dark brown sugar 2 tsp baking powder 3 tsp cinnamon 1/4 tsp baking soda 1/4 tsp salt 3/4 cup milk 1/3 cup butter, melted 2 eggs Topping: 1/3 cup flour 1/3 cup sugar 1/3 cup dark brown sugar 2 tsp cinnamon 1/3 cup melted butter Pinch of salt Glaze: 1/4 powdered sugar 1-2 tbs milk Here's how to make them: Preheat oven to 375. Prepare a muffin tin with liners (this recipe will make 12) For crumble topping: Combine melted butter, sugars, and cinnamon. Add a bowl with the flour and salt. Whisk until a sand-like texture. Set aside. For the muffins: In a bowl combine flour, sugar, baking powder, baking soda, cinnamon, and salt. Mix. Add in milk, melted (and cooled) butter, and eggs. Stir until well combined. Scoop into muffin liners, filling 3/4 of the way up. Add crumble on top, and gently use a knife to push into the batter. Bake for 7 minutes, then turn the oven to 350 and bake another 8-10 minutes until done. Test for doneness by inserting a toothpick in the center. It will come out clean, if so. While the muffins are baking, mix together powered sugar and milk, to make the glaze. Let muffins cool, drizzle with glaze and enjoy!

This is an easy dinner that makes the house smell like you’ve been cooking all day. Here’s what you’ll need: Sausage links (Italian sausage, turkey or chicken) 2 large green peppers, 1 inch slices 1 onion, 1 inch slices 3 cloves of garlic Olive oil @gibsonssteakshop seasoning blend or a blend of Italian seasonings, garlic powder, pepper and salt. Here’s how you make it: Preheat oven to 425°. Slice up onions and peppers. Drizzle in olive oil into a skillet and add sausage to the pan. Season generously and add half of the peppers, onions and garlic. Toss to mix. Bake for 30 minutes, flipping sausage halfway through. Add the remaining onions and pepper mixture. Bake for another 20-25 minutes until all the peppers have softened and the sausages are browned and cooked through. Can be served alone or with French rolls and marinara sauce! My Easy Taco Dip Everyone's had a taco dip before, but not everyone seasons the layers as they should. We're taking a classic, and adding some love to make an easy and delicious taco dip! Here's what you'll need: 1 can of refried beans 1 cup light sour cream 1/2 cup of your favorite salsa 2 avocados 2 cups pico de Gallo 1 lime 1-2 cups freshly shredded cheddar cheese 9x13 dish Homemade taco seasoning: 1 tbs chili powder 1 tbs paprika 1/2 tsp garlic powder 1/2 onion powder 1/2 tbs cumin 1/4 tsp oregano 1/4 tsp salt 1/4 tsp pepper Dash of cayenne pepper Here's how to make it: 1. You start by making homemade taco seasoning. It's so easy, don't even think about buying it. You have all the ingredients in your spice drawer, I promise! Set that aside, because you'll divide it into two later. 2. Add 3./4 of the can of refried beans, 1/2 of the seasoning mix and juice of a lime to a bowl. Mix well until combined. Spread in the bottom of the dish. This will be the bottom layer. 3. Take 1 cup of sour cream, and add the remaining taco mixture. Spread onto the refried bean layer. 4. Then spread your favorite salsa on top of that. I used a green one, but any will do! 5. For the guacamole layer, mash 2 avocados with 1/2 cup of pico and the juice of a lime. Add that on top of the salsa layer. 5. Top with cheddar cheese and more pico. 6. Refrigerate for at least 1 hour. Serve with crispy tortilla chips and enjoy!

#veggiepastabake Let's use our garden fresh veggies and make an easy summer pasta bake. This recipe is perfect to mix and match your favorite veggies or whatever you have on hand. This came together so quickly and was so delicious! Here's what you'll need: 2 chicken breasts, diced 1 cup of orzo, uncooked 1 zucchini 1 ear of corn 2-3 jalapenos, sliced (omit if you don't want it spicy) Olive oil 1 cup low-moisture mozzarella, cubed 1/2 cup grated parmesan Buttered casserole dish Gibsons seasoning (or garlic powder, Italian seasonings, salt and pepper) Here's how to make it: 1. Start by dicing up the zucchini into bite-sized pieces. Then slice the jalapeno, removing the seeds if you'd like. You can sub red pepper to omit the heat but still get the color and crunch. Cut the kernels off the corn and set aside. 2. Dice the chicken into bite-sized pieces—seasoned heavily with Gibson's seasoning or similar. Cook in a pan with olive oil. Remove once cooked and set aside. 3. Meanwhile, cook the orzo. 4. Saute the zucchini in the same pan the chicken was cooked in. After 2 minutes, add in the jalapenos and corn. Cook for 3-5 minutes, until just softened. 5. Drain pasta, and add veggie mixture and chicken to the pasta. Add in cubed mozzarella and mix. 6. Add to a buttered casserole dish. Top with grated parmesan. Bake uncovered at 350 for 20 minutes, until browned on top. Can keep in 200* oven until ready to serve. This can easily be doubled to accommodate your crowd. This serves about 4 adults.

Baked Mostaccoli. What you'll need: 1 lb penne 3 tbs butter 2 cloves of garlic, grated 2 14oz can of crushed tomatoes 2 cups of freshly shredded mozzarella cheese 1 1/2 cups half and half 1 tablespoon red pepper flakes Salt and pepper to taste Here's how you make it: Preheat oven to 350. 1. Boil water, cook pasta 1/2 of recommended cooking time. 2. In a saucepan add the butter and garlic and stir for 1 minute. Add in crushed red pepper flakes, stir. Then add in the canned tomatoes. Let simmer on low for 10 minutes. 3. Add in the half and half and stir to combine. 4. Add pasta into the sauce and mix well. 5. Pour pasta into a baking dish. This can finish cooking in the oven or be refrigerated until ready to bake and serve. 6. Top with cheese and bake for 25-35 minutes or until cheese has browned and and is bubbling.

3 tbsp butter 3 cloves of garlic, grated Gibsons seasoning salt 2 lbs chicken thighs Chicken thighs patted dry, seasoned liberty with Gibsons Seasoning Salt 1. Melt the butter in a pan. Add the garlic and continuously stir for 1 minute. Let cool slightly. 2. Pour melted butter over the chicken thighs. Let marinade for 1 hour. 3. Preheat grill or grill pan to 475. Add chicken, let cook for 8-10 minutes (until it releases easily). Flip, cook another 6 minutes or so until 165*. If cooking in the oven, broil for last 1-2 minutes of cooking to get them golden brown. Add ontop of a bed of rice or with potatoes.
