Healthy gf/df blender carrot cake đĽâ¨
Okay, there is no cake that screams Motherâs Day like a carrot cake does!! This is the most perfect - and easiest - way to say thank you to your mother figure for all that they do.
Cake recipe:
- 3 eggs
- 1 cup almond flour
- 1/2 cup buckwheat flour
- 2 large or 3 small grated (or roughly blended) carrots that have been STRAINED
- 1/4 cup oil (I used hemp seed oil)
- 1/2 cup nut milk
- 1/3 cup granulated sweetener (monk fruit, coconut sugar, etc)
- 1/4 cup maple syrup or honey
- 1 handful coconut flakes or shredded coconut
- 1 tbsp cinnamon
- 1/2 tbsp nutmeg
- 1 tbsp baking powder
- 1 pinch bicarbonate soda (not essential)
Blend your carrot on a low setting so it doesnât blend it, but rather chop it. Then, remove it and strain the moisture from it using a milk cloth.
Blend all of the other ingredients together (besides your carrot) in a blender (I used the @vitamix_aunz) then combine the carrot to your mixture.
BAKE @180°C for approximately 35-45 minutes (or until a skewer comes out clean)
Frosting;
- 1 cup of soaked cashews (soak in hot water for 10-15 minutes while you make your cake)
- 3 tbsp maple syrup or honey
- 1 tbsp lemon juice
- 1 tbsp of nut milk at a time until it reaches the consistency in the video above
BLEND until it is smooth. Then ice your cake and add walnuts and coconut flakes to the top â¨

Frosting; - 1 heaped cup of raw cashews (soaked in boiling water for approx 20 minutes) - 2 big squeezes of lemon - 1 tbsp coconut oil - 3 tbsp maple syrup (or 2 tbsp honey) - 1/4 cup almond milk Blend it up until super smooth!! I topped mine with coconut and walnuts, and it was delicious. Cake ingredients; - 2 eggs - 1/2 cup unflavoured lactose free or DF yoghurt (or vanilla) - 1/4 cup plant milk - 2 tbsp maple syrup - 1 tbsp cashew spread - 1 cup almond flour - 1/3 cup buckwheat flour - 2 tbsp coconut sugar - 1 tbsp + 1 tsp maca powder - 1 tbsp vanilla extract - 1 tbsp baking powder + a pinch of bicarbonate of soda Icing; - 1 tbsp cashew butter - 2 tbsp maple syrup Microwave this icing mixture for 40 seconds, it should be a thick caramel. Keep adding almond milk until you get a thinner, more spreadable caramel mixture. If you donât try this, you are missing out. ¡1d ago gf & vegan whole food sweet potato flatbread 3 ingredients, delicious, versatile and cheaper bread substitute. You can DO no wrong with this recipeee. It is so dang yum! I love to have it with smoked salmon, chicken, salad, any sandwich condiments, and even on their own 𤤠Ingredients; 1. 700g steamed sweet potato, about 1 large sweet potato (not raw) 2. 1 cup buckwheat flour 3. 1/3 cup + 2 tbsp arrowroot OR tapioca flour + salt to taste Directions; 1. Boil your sweet potato and then mash until SUPER fine (I use a hand blender to achieve this consistency) 2. Add in your flour and mix 3. With wet hands grab a handful and spread onto a greased pan 4. Cook for about 3 minutes on each side on medium heat (I like to turn it down to low and pop the lid on to ensure it cooks all the way through once I flip it) 5. Serve warm - it tastes best that way. If you are reheating it or defrosting, pop it in the oven or air fryer to crisp back up. Enjoy!! ¡5d ago chewy wholefood matcha crumb cake đľ As a matcha ENTHUSIAST and addict, I seriously donât know why itâs taken this long for a matcha cake to come to fruition. The cake of my dreams. Death row meal. Cake base; * 1.5 cups almond flour * 4 tbsp tapioca flour * 2-3 tbsp matcha (I recommend sifting it) * 1/3 cup any sugar (I used coconut sugar) * 3 eggs * 1/3 cup maple syrup * 1/4 cup any nut milk * I also used 1 tbsp of vanilla protein powder (not sure why, but itâs not essential haha) Crumb; * 1/2 cup almond flour * 1 small sprinkle of matcha (or 1 tsp if you want it strong) * 1 small dash maple syrup Directions; 1. Combine all of the cake ingredients and mix by hand or with a hand whisk 2. Add to the oven at 180°C fan forced for approx ten minutes 3. Top with the crumb ingredients then add it to the cake after about 10 minutes in the oven 4. Return to the oven for about 30 minutes or until a skewer comes out of the middle clean 5. Purchase the warburtons soft sliced brioche rolls in any Coles store near you to make this recipe; Ingredients; - 2 @warburtonsgf soft sliced brioche rolls - Cinnamon filling; 1 tbsp tahini, 1 tbsp maple syrup, 1 pinch cinnamon, dash of almond milk - Egg wash; 2 tbsp almond milk, 1 egg - Cinnamon sugar; 2 tbsp granulated monk fruit sweetener & 1 pinch cinnamon Directions; 1. With a rolling pin, flatten out the brioche roll halves and spread the cinnamon filling evenly onto each piece 2. Roll them up, cut each roll in half, and dip in the egg wash 3. Place in the air fryer on 180°C for approximately 7-10 minutes and then remove 4. Dip in the cinnamon sugar and you are done! ¡2024-11-24SAVOURY RICE PAPER CROISSANT 𤤠Yuuuuummm, you must try this!! I am not usually one to try trending recipes, but this reallyyyy spoke to me. A gluten free pita if you will ⨠Rice paper ingredients (8 croissants); - 16 rice papers - 1/2 cup milk (any plant based/dairy milk of your choice) - 2 eggs - 1 tsp baking powder Filling ingredients; - 2 large handfuls of chopped spinach - 1 diced onion - 4 cloves of garlic - plenty of rock salt - dairy free cheese (or no cheese at all) Directions; 1. Whisk up your rice paper dipping mixture (eggs, milk, and baking powder) and set aside while you make your filling 2. Fry your onion and garlic until tranlucent (on ghee, tallow, or oil) and then add in your chopped spinach 3. Cook until spinach is slightly wilted and add plenty of salt 4. Dip your rice paper in the egg mixture and then layer 2 rice papers on top of one another 5. Cut in three parts (as shown in the video) and then assort the rice paper as per video instructions 6. Add a tbsp of your spinach filling to the bottom of your rice paper and then roll it up 7. Add all of the croissants to an oven tray and bake for approximately 30 minutes at 180°C fan forced (I did not preheat mine) 8. Take out of the oven and enjoy while warm!! ¡2024-7-31Under 30 minute healthy Chow Mein⌠I looove and will occasionally treat myself to takeout, but if I can make it from home on a weekly basis, it is a) more affordable b) healthier, and c) I know all of the ingredients in it⌠Plus it helps that this is SO simple to make, healthy, and whole food based ⨠Ingredients; - 5 chicken thighs (diced into cubes) - 1 carrot julienned - 3 cups of sliced wombok cabbage - 3 stalks of green onion (the hard white parts separated from the soft green parts) - 2 cups bean sprouts - 3 garlic cloves sliced - @mingleseasoning Chow Mein Seasoning Sachet (found exclusively at Woolworths supermarkets) Directions; 1. Julienne your carrot and slice up your cabbage, garlic, and green onion (ensuring you are separating the hard white part of the green onion from the soft green part) 2. Heat up your oil and soften your garlic in your pan before adding in your chicken thighs 3. Add in 2 tsp of the mingle chow mein seasoning to your chicken and fry until brown 4. Add in your carrot, white parts of the green onion, and wombok cabbage, and cook until softened 5. Add in your noodles and the remaining mingle chow mein seasoning, and stir through 6. Once cooked through, add in the greens of the green onion and the bean sprouts and remove off the heat 7. Serve and enjoy!! It is SO easy, deliciously fudgy, whole food based, and only has very minimal ingredients. Make this! GENUINELYâŚobviously itâs not the OGest of the OGâs, but itâs damn near close for my gf/df peeps đŤśđ˝ Cream ingredients - 2 cups boiled cashews - 1 cup almond milk boiled with the juice of 1/2 a small lemon (this should be boiled for approx 10 minutes or until resembling a thicker texture) - 1/3 cup maple syrup Biscuit ingredients; - 3 egg whites whisked with 1/3 cup coconut sugar until stiff peaks form - 1 cup almond flour - 2 egg yolks - 1 cup espresso Directions; 1. Whisk your egg whites and coconut sugar with a hand held mixer until stiff peaks form 2. Gently fold in your flour and egg yolks to ensure the air does not get completely removed from the batter 3. Form into log shapes (should make approximately 16) or place it on a sheet and cut once baked (like I have done) and bake on 160°C not preheated for 25 minutes. 4. Combine your boiled cashews, almond/lemon milk mixture, and maple syrup in a blender and keep blending until a very smooth mixture has been achieved 5. NOW WE CAN FORM THE CAKE: dip your biscuits in espresso and lay them down on the base and spoon a few tablespoons of espresso over the biscuits 6. Add half of your cream mixture on top of the base layer, and repeat once more 7. I genuinely cannot express how SIMPLE and delicious it is! oh, it also uses cheaper cuts of meat and seasonal vegetables that lowers its cost. Winning in more ways than one đŤ Ingredients; - 500g beef mince - 2 mini bags of baby capsicums (approximately 20 baby capsicums) - 1 carrot - 1 zucchini - 1 onion - 4 (or more) cloves of garlic - a large handful of parsley - 1 bottle of tomato passata (I use mutti) - 1 tbsp smoked paprika - salt to taste Mash potato (I did not record the measurements, but I used 5 organic white potatoâs and added almond milk bit by bit until it reached the above consistency) Directions; 1. Blend up or grate all of your vegetables 2. Put aside a few tablespoons of the blended up vegetables and strain through a milk cloth to remove the water (do not strain the remaining vegetables being used for the sauce) 3. Combine the strained vegetables with the beef and add a few pinches of salt. Once combined form into mini balls 4. Sear the meatballs slightly in your pot with some avocado oil and then remove once slightly browned 5. Combine the remainder of your blended vegetables, passata, smoked paprika, and a few pinches of salt to the pot. Once combined, return your meatballs to the sauce 6. Let this simmer for as long as you please (I let mine simmer for 15 minutes, and it was done!) 7. Serve on rice or mash potato and enjoy đŤśđ˝ I like to add salt at the end vs adding too much salt throughout, but this is totally up to you!
