Chicken Noodle Soup

-1/2 Onion chopped
-Chopped carrots equal to onion
-Chopped celery equal to onion
-3 chicken breasts
-Extra wide "no yolks" noodles 1 bag
-Heavy cream 1/2 cup
-chicken broth (enough to cover) about 10 cups
-Parsley to taste
-Sage to taste
-Rosemary to taste
-Thyme to taste
-Olive oil 2 tbsps

1) Cook Chicken with seasonings, chop veggies to preference size while you wait. I use one full onion medium sized and cut my carrots and celery to match in equal parts
2) Pull chicken out and add oil To pan. At low medium heat add carrots and celery and stir frequently til slightly soft
3) Add onions and seasonings to carrots and celery and cook til onions caramelize
4) Add chicken back to pot and stir in, let them marinade a few mins and get to know each other
5) Pour in entire bag of noodles, then cover with chicken broth (or water and use chicken cubes like I did)
6) BRING TO A BOIL if you don't the noodles will taste off.... Not sure why but they do. It must come to a boil and stir it occasionally, then kill the heat
7) Once done taste and add seasonings to desired taste. Add heavy cream and stir before serving for that extra MOM touch
8) Now for how you handle leftovers, this is gonna be one thick soup the first day, so add chicken broth to pan next day to fill pot back up and this pot will feed a LARGE amount of folks. Just might need another splash of cream if you add a lot of broth

Easy Dinner You can make at home Meatloaf 1lb ground beef 1lb sausage 1/2 onion diced 1 sleeve ritz crackers crushed 2 eggs 1 tbsp Italian seasoning 1 tsp paprika 1 tbsp caramelized onion kinders seasoning 1 tbsp garlic powder 2 tbsps Worcestershire sauce Salt and pepper to taste Glaze 1/2 cup jalepeno ketchup 2 tbsp brown sugar 1 tbsp Worcestershire sauce Preheat oven to 350* Mix all ingredients in bowl, don’t over mix or meatloaf will be super dense Place in baking pan, mix together glaze and spread over top evenly Bake at 350 for 1hr and 15mins Let cool once out and serve I made mine into sandwiches, like a grilled cheese with some mayo… basically a patty melt #meatloaf #mealideas #thingstocookfordinner #holmescooking

Sausage Egg muffin bites 12 eggs scrambled 1/2 onion diced 1 diced green pepper 1lb sausage cooked and drained Cheese to sprinkle over top Salt and pepper to taste Optional* your favorite bbq seasoning to taste Preheat oven to 350 In a large bowl beat 12 eggs and set aside In another large bowl (or use the same bowl and mix in with the eggs, it works either way… just might be easier this way) combine and mix sausage, onion, and green pepper along with all seasonings Lightly grease or line muffin tins Fill muffin tins 1/2 full of sausage mixture and pour over beaten egg til 3/4 filled Sprinkle over tops with cheese and bake 15-20 mins or til eggs are set Let cool 5-10 mins Ziploc and save for up to 4 days for an easy grab and go or grab a few and use them as an easy breakfast burrito filling #breakfast #mealideas #easyrecipesathome #holmescooking

Cheedar and Broccoli Soup with crostinis 1 stick Garlic and herb Butter (or salted) 1 chopped Onion 4 tbsps garlic 10oz bag shredded carrots 1/2 Cup Flour 4 Cups Chicken stock 1 Qt Heavy Cream 16 oz chopped Broccoli 16oz shredded Cheese (I used mild) 1 tsp Paprika 1 tsp Nutmeg Seasoning salt and Pepper to taste Crostini’s French bread in 1/4” slices Olive oil to drizzle Garlic powder
 Preheat oven to 350 Place French bread on foil lined baking sheet and brush or lightly drizzle olive oil over top of bread Sprinkle on garlic powder and bake til toasted to your liking (about 15-20mins) Melt Butter in a large pot over medium heat Add chopped onion and all seasonings Cook down onions til translucent then add garlic And carrots stirring til fragrant
toss in flour and mix, let cook a few mins to remove flour taste and form a roux
