Olive Oil Lemon Cake 🍋 ⠀ A super moist and fragrant cake without the need for eggs or butter. The olive oil adds a subtle fruity, and slightly peppery taste which goes super well with the tartness of the lemons! ⠀ RECIPE Cake batter: - 2-3 lemons, juice + zest - 180 g sugar - 120 g soy milk - 90 g olive oil (I used extra-virgin) - 1 tsp vanilla extract ⠀ - 250 g all purpose flour - 1 tsp baking powder - 1 tsp baking soda - 1/4 tsp salt ⠀ Icing (optional): - 100 g powdered sugar - 1 tbsp lemon juice ⠀ ❶ Preheat the oven to 180°C. ❷ Zest the lemons and rub in the sugar to release the flavor and color. Mix with the wet ingredients until well combined. ❸ In a separate bowl combine the dry ingredients, then add the dry to the wet mix and stir to combine. Don’t overmix the batter. ❹ Pour the batter into a cake pan lined with parchment paper. ❺ Bake at 180°C for 45-55 until golden brown. ❻ Remove from the oven and allow to cool for 10 minutes in the pan. Then remove the cake from the pan and allow to cool completely. ❼ If you want, glaze the cake with some icing and let it dry for 1-2 hours. French Onion Soup 🇫🇷🧅 ⠀ RECIPE For the broth: - 2 onions - 2 carrots - 3 celery stalks - 1/2 celeriac - 1 leek - 3 garlic cloves - 8 dried shiitake mushrooms - 2 bay leaves - 1 tbsp juniper berries - 1 tbsp black pepper corns - 3 L water ⠀ For the soup: - 4 tbsp vegan butter - 2 tbsp oil - 5 yellow onions - 1 tbsp flour - 250 ml dry white wine - 1.5 L of the broth - a few sprigs thyme - 1 sprig rosemary (optional) - 2 tbsp dark soy sauce - 1 tbsp mushroom „fish“ sauce (optional) ⠀ For the croutons: - good quality bread - 2 tbsp olive oil - pinch of salt - vegan cheese ⠀ ❶ For the broth sauté about 1/3 of the veggies and the dried mushrooms to create some deep browning flavors. Deglaze and repeat 1-2 times. Fill up with water, add the remaining ingredients and let it steep for 1-2 hours until all the flavor is extracted into the broth. ❷ Finely dice a bunch of onions (more than you’d think!). ❸ Sauté the onions on medium-low heat until deeply caramelized. This may take up to 1 hour. ❹ Stir in the flour, then deglaze with white wine. Vegan Shakshuka 🤤🔥 ⠀ Shakshuka is a popular North African and Middle Eastern spiced tomato and pepper sauce that is commonly served with eggs. This is my go-to recipe and it’s one of my favorite things to enjoy my homemade bread with. Of course you can use eggs, but I love to use hummus as an easy & delicious vegan alternative! ⠀ RECIPE - 1-2 tbsp oil - 1-2 onions - 1 red pepper - 4-6 garlic cloves - 1 tbsp tomato paste - 2 tsp ground cumin - 2 tsp paprika - 1 tsp ground coriander - 1 tsp cinnamon (optional) - 400 g good tomatoes (fresh or canned) - 1-2 tsp harissa paste (or a bit of cayenne/chili) - salt - black pepper - hummus (or eggs) - parsley - crusty bread ⠀ ❶ Sauté onion with a bit of oil until translucent. Add the peppers and cook for a few minutes, then add the garlic, tomato paste and spices. Cook for 1-2 minutes, then add the tomatoes to the pan. ❷ Add as much or little spice as you like, season with salt & pepper. Let it simmer or braise in the oven for 10-30 minutes to intensify the flavors. ❸ Serve with fresh parsley and some crusty bread. Potato Latkes 🥔 one of the easiest and most underrated potato dishes! ⠀ RECIPE - 500 g starchy potatoes - 1 large onion - 2 tbsp wheat flour - 8 tbsp breadcrumbs - 2 tsp salt - neutral oil, for frying ⠀ For serving: - vegan sour cream - apple sauce - chives ⠀ ❶ Coarsely grate the potatoes and onion. ❷ Place both in a bowl, mix with salt and then squeeze out the liquid using a cheesecloth or kitchen towel. ❸ Put the potato and onion back into the bowl, mix with flour and breadcrumbs and shape into disks. ❹ Heat some oil in a pan to approx. 170°C and fry the potato pancakes on both sides until crispy. ❺ Place on a wire rack or kitchen paper and sprinkle with a little salt. ❻ Serve fresh, for example with some apple sauce and vegan sour cream. Easy Skillet Lasagna 👨🏼‍🍳🇮🇹 ⠀ RECIPE For the lasagna: - 2 tbsp olive oil - 1 onion - 1 carrot - 1 celery stalks - 2 garlic cloves - 2 tbsp tomato paste - 400 g cooked brown lentils (with cooking water) - 400 g passata - 2 bay leaves - 1 tsp thyme - 1 tsp oregano - pepper - 150 g lasagne sheets - béchamel sauce - vegan cheese ⠀ For the lentils: - 100 g brown lentils - 1 onion - 1 bay leaf - 1 clove of garlic - 1/2 tsp salt ⠀ For the béchamel: - 40 g vegan butter (or 30 g olive oil) - 4 tbsp flour - 400 ml plant-based milk - salt - a pinch of nutmeg - 2 tbsp nutritional yeast ⠀ ❶ Cook lentils with a few aromatics. They should still have a slight bite and not be mushy. ❷ Finely chop the onion, carrot and celery and fry in a pan until translucent. Add the garlic, bay leaves and tomato paste and fry briefly. ❸ Deglaze with the lentils and passata, add the thyme and oregano, season with salt and pepper and simmer for at least 10 minutes. ❹ For the béchamel, melt the butter in a pan, then stir in the flour and sauté for 30 seconds. Then stir in the milk in 3-4 stages. Gently bring to the boil, whisking constantly and simmer briefly. Season to taste. ❺ Place the lasagna sheets in the tomato sauce, add a little water if necessary and cover the pan with a lid. Simmer in the tomato sauce for about 10 minutes. ❻ Pour the béchamel and cheese over the sauce and briefly grill in the oven until the cheese has melted and is golden brown. Alternatively you can just melt the cheese with the lid on the stove. Boiling the potatoes with baking soda helps breaking down the pectin, creating a rough surface and thus more crispiness 🔥 Full credits for the method go to Kenji Lopez who has an in-depth article about the science behind this recipe on his blog serious eats! ⠀ RECIPE - about 2 kg potatoes - salt - 1/2 tsp baking soda - 4 tbsp oil (neutral vegetable oil or olive oil) - 1 sprig rosemary - 3 garlic cloves ⠀ ❶ Preheat oven to 230°C/450°F. ❷ To a large pot add 3 liters of water, salt and baking soda and bring to a boil. ❸ Peel and chop potatoes, then boil for 10-15 minutes until fork tender. ❹ Strain the potatoes, then shake to roughen the surface. ❺ Infuse the oil with garlic and rosemary. Indian Onion Bhaji 🧅🇮🇳 ⠀ Onions, deep-fried in a fragrantly spiced batter served with a refreshing cilantro yogurt dip 🤤 I don’t often deep-fry, but this was absolutely delicious! ⠀ RECIPE For the Bhaji: - 2 large onions - 1-2 jalapeños - small bunch cilantro - small piece ginger - 1/2 tsp garam masala - 1/2 tsp ground coriander - 1/2 tsp ground cumin - 1/4 tsp ground turmeric - 1/4 tsp red chilli powder - 3/4 cup (100 g) gram flour (chickpea flour) - 1 tsp salt - splash of water, if needed - 2 liters neutral oil for frying - salt, to dust after frying ⠀ For the dip: - 1/4 cup vegan yogurt - Small bunch cilantro - 1 jalapeño - 1 small garlic clove - Small piece ginger - 1/2 lemon, juiced - Pinch of salt ⠀ ❶ Slice the onion lengthwise, then add them to a large bowl and combine with the ingredients for the batter. Set aside. ❷ Blend all ingredients for the yogurt dip. Set aside. ❸ In a medium pot heat the oil to 160°C. ❹ With slightly wet hands, form small clusters of the onion batter mixture and carefully add them to the hot oil. Vegan Pad Thai 🇹🇭🌱 ⠀ This is my completely plant based version of the famous noodle stir fry from Thailand 👨🏼‍🍳 Full of flavors and textures, this has to be one of the best noodle dishes out there! ⠀ RECIPE Pad Thai sauce: - 60 g tamarind pulp - 1/2 cup boiling water - 3 Tbsp palm sugar (or brown sugar) - 1 Tbsp Thai black soy sauce - 1-2 tbsp vegan fish sauce (or mushroom “oyster” sauce) ⠀ Pad Thai: - 250 g rice noodles - 200 g firm tofu - 1 tbsp cornstarch - 4 garlic cloves - 3 tbsp nutritional yeast (optional) - 2 shallots - 3 scallions (or garlic chives, if you can find them) - 1 handful mung bean sprouts - 4 tbsp roasted peanuts - 1-2 limes ⠀ ❶ To make the sauce, dissolve the tamarind pulp in boiling water, then strain and combine with the remaining sauce ingredients. ❷ Tear tofu into chunks, dust with cornstarch and fry with a bit of oil and salt until crispy. Set aside. ❸ Soak rice noodles in hot water for about 10 minutes until 80% softened. Strain and set aside. ❹ Fry shallots and scallion whites until slightly caramelized, then add garlic and nutritional yeast and cook for another 1-2 minutes. ❺ Add the noodles and sauce to the pan, toss to combine, then add in the tofu, scallion greens (or garlic chives) and mung bean sprouts. ❻ Serve with crushed peanuts and fresh lime juice. Fall Focaccia 🍂🎃 ⠀ Pumpkin season isn’t over yet and this is a delicious recipe to celebrate this seasonal ingredient! ⠀ RECIPE For the dough: - 600 g all purpose flour (or bread flour) - 100 g whole wheat flour (or more all purpose flour) - 300-400 ml water - 200-300 g pumpkin puree - 14 g salt - 5 g dry yeast ⠀ Toppings: - pumpkin - rosemary - sage - olive oil (mixed with water and salt) - flaky salt ⠀ ❶ To make the pumpkin puree, deseed the pumpkin, then bake at 200°C for 30-40 minutes until soft. ❷ In a large bowl combine all ingredients for the dough. Mix until well combined, then rest for 15 minutes. ❸ Stretch & fold the dough to strengthen the gluten network, then rest for 30 minutes and repeat. ❹ Let the dough ferment in the fridge overnight or up to 48 hours. ❺ Place the dough on a well oiled baking tray, spread it out, then cover and let it proof for 30-60 minutes. (you can skip this step) ❻ Dimple the dough with your fingers, then top with a generous amount of olive oil and the toppings of your choice. ❼ Bake in the preheated oven at 240°C for 25-35 minutes until deeply browned. ❽ Let it cool for 1 hour. Creamy caramelized onion butter beans 🤤🔥 ⠀ RECIPE (2 portions) - 500 g butter beans (+ liquid) - 1 tbsp olive oil - 2 tbsp vegan butter - 2-3 onions, finely sliced - 3 garlic cloves - 100 g sun-dried tomatoes - small bunch parsley - 1 tsp smoked paprika - 4 tbsp vegan cream cheese - 100 ml vegan cream - 2 tbsp nutritional yeast - lemon juice - salt - pepper ⠀ ❶ Start by cooking the onions on medium heat for 15-20 minutes until well caramelized. ❷ Add the garlic, parsley stems, sun-dried tomatoes and smoked paprika, cook for another 2-3 minutes, then add in the beans with some of their cooking liquid. ❸ Stir in parsley, lemon juice, cream cheese and cream.
