·2024-12-26It may sound strange… but this rice was a hit yesterday!!! Arroz con Cranberries?? 😱 Say what?? 🍒 Here’s the recipe… Arroz con Bacon & Cranberries Ingredients: 1 pack bacon (chopped or diced) 1 onion (diced) 2 tbsp Healthy Rican Sofrito 1 tbsp Healthy Rican Sazón 2 tbsp Coconut Aminos (or soy sauce) 1 cup dried cranberries 4 cups jasmine rice (or medium grain) Water to cover (approximately 4 cups) Directions: • In a large pot (or caldero), add the chopped bacon at high heat. Allow the bacon to fully cook and release the fat. • Remove some of the excess fat and add the diced onion. Allow the onion to cook for a few minutes, then add the seasonings, coconut aminos or soy sauce and rice and mix well. • Cover the rice with water until the liquid is ¼ inch above the rice. Add the cranberries and salt to taste. Mix well. • Allow the liquid to come to a boil and once it evaporates, turn the rice from the bottom up, reduce the heat to low, cover and cook uninterrupted for 20 minutes. • After 20 minutes, turn and fluff the rice from the bottom up. Remove from heat, cover and wait 5 minutes. The rice should be completely cooked through and fluffy. • Enjoy with your favorite protein and side of veggies. *This recipe was shared with me by a friend, and once I tried it I knew it would be a staple during family gatherings. This recipe makes a large batch. Have you ever tried them? 🥧 Pastelillos de Carne (Meat Pies) Ingredients: 1 pack Pepperidge Farm Puff Pastry Shells 1 lb ground beef 1 tbsp sofrito 1 tbsp adobo 1 tbsp sazón 1 tbsp beef bouillon ¼ cup diced onions ¼ cup diced peppers 2 tbsp red pimentos 5-6 spanish olives (optional) 1 tbsp tomato paste Shredded cheese (optional) Directions: Bake the puff pastries according to the directions. While the puff pastries cook, prepare the meat. Add the ground beef into a frying pan, break up the ground meat, top with the seasonings, and rest of the ingredients. Cook for a few minutes while stirring all the ingredients together. Bring the heat to low, cover and simmer for 10-15 minutes, or until the meat is completely cooked through. Open the puff pastry and stuff with meat and cheese if desired. Arepas are so quick and easy to make, they are whole grain and naturally gluten-free and can be enjoyed as a breakfast or delicious snack. Adding avocados to arepas provides a good source of fiber and good fats. I’ve partnered up with @Aguacates - Love One Today to showcase diabetes-friendly Latin recipes. Together, we’re bringing you meal ideas that incorporate avocados, promoting both culinary enjoyment and health benefits. It’s no secret that healthy eating patterns associated with improved type 2 diabetes outcomes include plenty of fruits and vegetables and unsaturated fats. Avocados are a fruit and contribute 6 grams of unsaturated fats and are a good source of fiber. Enjoy an aguacate with your meal today! Avocado Arepas Servings: Approximately 12 Ingredients: 2 cups masarepa (instant or pre-cooked corn meal) 2 tbsp ghee (clarified butter) ½ tsp salt 1 ¼ cup warm water 1 cup shredded part-skim mozzarella Avocado oil or spray (as needed) 1 large aguacate (avocado) 1-2 large beefsteak tomato, thinly sliced 1⁄2 small red onion, thinly sliced Spinach leaves (as needed) Optional: seasonings like paprika, tajin, bagel seasoning, etc. Directions: • Mix the masarepa, ghee, salt and water with your hands. • After you have a good mix, lightly mix in the mozzarella cheese. • Let the masa sit for 5 minutes. • Form the arepas by rolling the dough into small balls, then flattening them with your hands. They should look like 3 inch pancakes. • Use a cast iron skillet or non-stick frying pan. On medium heat, lightly spray or spread avocado oil into the pan. • Add the arepas and cook for approximately 5 minutes on each side. Or until the arepas appear golden brown. • Carefully slice open the arepa with a wet knife, stuff with avocado, tomato and onion slices and spinach. ·2024-8-25🌴 Mami’s Limbers de Coco 🥥 These are definitely my favorite, and I wanted to share with you. ☺️ Ingredients: 1 can (13.5 fl oz) coconut milk 1 can (15 fl oz) cream of coconut (Coco Lopez) 1 can (12 fl oz) evaporated milk 1 full coconut (with coconut water) 1 tsp vanilla ½ tsp cinnamon (add more to taste) 1 cup water, plus the coconut water (adjust to your liking, for a sweeter or creamy limber, use ½ of the water) ¼ cup cane sugar or monk fruit (lower sugar alternative), sweetened to taste Directions: Carefully make a hole in the coconut using a wine opener and empty the coconut water into a cup. Open the coconut and remove the pulp. Add all the ingredients into a blender including the coconut water and pulp. Taste the mixture and add additional water and sweetener as needed or to your preference. For a sweet and creamy limber, reduce the water to ½ cup or only add the coconut water. Add the mixture into freezer safe cups, top with additional cinnamon if desired and freeze overnight.
