ONE PAN TUSCAN PASTA (healthy dinner idea!)🍝🌿 You need: Sauce on the bottom: 2 tbsp olive oil 6 cloves minced garlic 3/4 cup full fat unsweetened coconut milk or coconut cream 1/4 cup nutritional yeast 1 tsp dried basil 1 tsp dried oregano 1 tsp salt *add all of this to a pan and whisk The rest: 8 oz small short pasta I use protein pasta 1.5 cups chopped broccoli 1/2 cup chopped sun-dried tomatoes 1 cup sliced baby Bella mushrooms 2 cups chopped spinach 4 cups water *mix it all together well Bake covered for 20 minutes and uncovered for 20 minutes at 400 F. I wanted to share this delicious latke recipe with you for sweet potato latkes. They are amazing and so easy to make. Even if you’re not jewish, you gotta make these they are heaven. ingredients: 2 large sweet potatoes grated 1/2 cup whole wheat flour 1/2 cup JUST egg (vegan egg substitute) 1 small yellow onion pulsed in food processor 1 tbsp cornstarch 1 tsp salt 1 tsp pepper How to: 1. Mix all ingredients in a bowl until combined. 2. Heat 3-4 tbsp olive oil in a nonstick pan until on medium to high heat then using a cookie scoop, scoop the batter into the pan and flatten with a spatula so they cook evenly. 3. Cook 3-4 minutes per side or until golden brown. 4. Line a platter or plate with paper towel. 5. As they cook, lay the latkes on the paper towel to soak up excess oil. 6. Preheat oven to 400 F. 2. In a large nonstick pan, saute garlic in oil for a few minutes on medium heat until golden. 3. Then, add the spinach and artichokes then saute for 5 minutes to cook off the moisture. 4. Add in tofu, pumpkin, spices, then mix. Add in the Mozzarella the mix again. Save this (healthy) HAPPY MEAL at home for only $2 🍎🍟👦🏼👧🏽 ✨Tofu McNuggets: 6 pieces 1/2 block high protein tofu 1/4 cup breadcrumbs 1/4 cup whole wheat flour or gluten free flour 1/2 cup water or soy milk Salt, pepper, garlic to season Cut block of tofu in half. Cut the half block into 6 pieces then shape them into nuggets. Save the extra shavings broken off for another meal! In a bowl mix the flour and milk to make a batter. Then pour the breadcrumbs on a plate with salt, pepper and garlic. Dip the tofu in the batter then roll in breadcrumbs. 
Lay on baking sheet with parchment paper. Spray with olive oil spray ✨Oven/Air-Fried Fries: 1/2 russet potato Olive oil spray Sea salt Peeling the potato is optional then cut into thin fries and lay on baking sheet with parchment. Spray with olive oil and sprinkle with sea salt. Bake or air fry at 400 F. until crispy/golden brown! life-changing LASAGNA SOUP 🍝 ! #partner Ingredients: 2 tbsp olive oil 
5 garlic cloves, minced 1/2 white onion, diced 2 cups halved cherry tomatoes 2 tbsp tomato paste 14 oz crushed tomatoes 1 32 oz jar marinara sauce 1 14 oz can lentils, drained and rinsed 8 oz lasagna noodles, broken up Pizza dough for garlic knots 2 cups fresh spinach 2 tsp Italian seasoning 2 tbsp fresh parsley garnish Fresh basil garnish 1 tsp salt 1 tsp pepper Ricotta of choice: I made homemade tofu cashew ricotta! But you can also buy any kind you like! Tofu Ricotta: 1/2 block firm tofu 1 cup raw cashews (boiled for 5 minutes) 1/2 cup fresh basil 1 tsp garlic powder 2 tbsp nutritional yeast 2 tbsp dairy free milk 1 tsp salt Pepper to taste (Blend in food processor until smooth) Garlic knots: you need 1 package of fresh pizza dough, cut into 6 pieces, roll into long logs, tie in knots, lay on baking sheet lined with parchment paper, brush with olive oil/minced garlic, sprinkle on Italian seasoning and bake for 10-15 minutes until golden. How to: 1. Bake garlic knots. 2. Saute garlic and onion in olive oil on medium heat 3. Add cherry tomatoes and saute a few more minutes 4. Add the rest of the ingredients except ricotta and garnishes. Then bring to a boil then cover and cook on medium stirring every few minutes 5. Make ricotta while soup cooks. Add half of it into the soup when it’s done and stir well. 6. Garnish with parsley and basil. Top each bowl of soup with garnish and a little more ricotta. 7. Dip garlic knots in! Enjoy!
