Hearty nourishing stuffed acorn squash ⭐️ FOR THE ACORN SQUASH: 2 small-medium acorn squash 2 tbsp olive oil 1/2 tsp salt FOR THE FILLING: 1 1/2 cups cooked bulgur wheat 1 1/2 cups chickpeas, drained and rinsed 2 cups baby spinach, chopped 1/2 cup chopped walnuts 1/2 cup dried cranberries 1/2 cup parmesan cheese, freshly grated 1/2 cup feta cheese, crumbled FOR THE SIMPLE DRESSING: 1 tbsp oil 1 tbsp balsamic vinegar 1 tbsp lemon juice 1/2 tbsp maple syrup 2 cloves garlic, minced Cut squash in half, scoop out seeds, and brush with oil and sprinkle halves with salt and pepper. Roast at 400F for 30-40 min. While the squash cooks, combine all filling ingredients together in a large mixing bowl. Whisk together the dressing ingredients and pour over the filling. Toss to coat. When the squash is done, use a large spoon to scoop the filling mixture into the centre of each squash half. Broccoli cheddar soup with a protein + nutrition boost 🥦 1 medium onion, finely chopped 1 large carrot, finely chopped 1 large stalk celery, finely chopped 3 cloves garlic, minced 3 tbsp butter, unsalted 1/2 tsp salt 1/2 tsp black pepper 3 tbsp flour, all purpose, whole wheat, or gluten-free 3 cups reduced-sodium vegetable broth 1 cup milk, I used 2% 6 cups broccoli, chopped into small pieces, approx. 2 heads 1 19 oz. can white kidney beans, drained and rinsed 2 tbsp parmesan cheese 1 1/2 cups shredded cheddar cheese Finely chop onions, carrot, celery, and garlic. I like to do so in a mini food processor. In a large pot on the stove, melt the butter. Add the onions, carrot, celery, and garlic. Season with salt and pepper, then saute over medium heat until soft, about 5-7 minutes. With a wooden spoon, stir in the flour to create a roux-like mixture, cooking for 2-3 minutes but being careful not to burn it. Gradually whisk in the milk and then broth, ensuring there are no lumps in the mixture. Increase the heat and bring the mixture to a boil before stirring in the broccoli, white beans, and parmesan cheese. Reduce heat and simmer the mixture covered until broccoli is soft, about 15-20 minutes. Optional: Use a blender to blend about ⅓ of the soup to help thicken it. See recipe below! #TrueNorth #RaisedTrue Honey Garlic Salmon Bites (Serves 6) Ingredients: 2 lbs fresh @truenorthseafood Atlantic Salmon, skin removed ½ cup reduced-sodium soy sauce ½ cup honey 3 cloves garlic, minced Instructions: Cut salmon into 1-inch cubes and set aside. Whisk together soy sauce, honey, and minced garlic in a large mixing bowl. Add the cubed salmon to the honey garlic mixture and toss to coat. If you have time, you can allow the salmon to marinate for up to 2 hours. Otherwise, go right to the next step. Coat the air fryer basket with olive oil spray and arrange salmon evenly inside. Air fry at 390F for 3-4 minutes, then turn the salmon and air fry again for another 3-4 or until the salmon bites reach an internal temperature of 145F. Serve salmon bites with rice and/or veggies of your choice and enjoy! 😊
