This air fryer baked potato is loaded with flavor – for all my potato lovers! Makes 2 servings: 1. Carefully stab holes all over two medium-sized, washed, russet potatoes. Drench with 2 tablespoons canola oil and 1 tablespoon salt. Rub to spread evenly. 2. Air fry or convection bake at 350F for 30 minutes. Then flip and cook at 350F for 10 more minutes. 3. Let potatoes cool slightly before cutting lengthwise down the middle, leaving the bottoms attached. Scoop out the potatoes into a small bowl, leaving a well. 4. Air fry the potato skins on their own at 400F for 3 minutes. 5. With the scooped potatoes, add 1 tablespoon butter, and a splash of milk, mashing with a fork. Add another splash of milk, if needed, to reach a creamy but not too runny consistency. 6. Fill the crispy potato skin shells with the mashed potatoes. Top with grated cheddar cheese and cooked bacon bits. 7. Bake at 400F for 3 minutes, top with sour cream and green onions. Enjoy!

·2022-1-30Ingredients (Makes 4 servings of wings): -900 g (about 2 lbs) split chicken wings -1 tablespoon of a neutral oil, like canola -¼ teaspoon of salt and black pepper, to taste -1 teaspoon ginger powder -1 tablespoon garlic powder -4 tablespoons baking powder -Optional: 1 tablespoon sesame seeds and chopped green onions Ginger-Soy Sauce/Glaze Ingredients: -3 tablespoons (60g) honey -1 teaspoon ginger powder -½ tablespoon garlic powder -3 tablespoons (45g) ketchup -1 tablespoon (15 mL) rice vinegar Directions: 1. Preheat the oven to 425 F (220 C). 2. In a big bowl combine the chicken wings, oil, salt, pepper, ginger powder, garlic powder, and baking powder, until chicken is coated. Spread out on two baking sheets lined with non-stick aluminum foil, leaving at least two inches of space between each piece. 3. Bake for 15 minutes, swap the position of the trays, and bake for 15 more minutes, for a total of 30 minutes. 4. While the chicken is baking, combine all the sauce ingredients into a small bowl until smooth. 5. Take out the chicken and let cool for about 5 minutes before carefully removing from the trays. If you do this right away without cooling, the chicken will likely stick to the tray. 6. Combine the chicken with the sauce until fully coated. Optional: top with sesame seeds. 7. Bake for 8-10 more minutes, swapping the trays halfway through cooking. 8. Serve with chopped green onions and enjoy. ¡Buen provecho!

Ingredients – Makes 4 servings: -1, ½ cups dry lentils (about 300 grams), rinsed -½ of an onion, roughly chopped -1 carrot, roughly chopped -4 cloves of garlic, minced -4 cups of water or stock - I used chicken stock -2 tablespoons of olive oil -½ teaspoon of ground nutmeg -1 teaspoon of cumin -1 tablespoon tomato paste -Salt, to taste – I used 1, ½ teaspoons of salt Directions: 1. Over medium-high heat, heat up the olive oil and saute the onion, carrots, and garlic until softened, about 3 minutes. 2. Add the nutmeg, cumin, and tomato paste. Cook for about 1 minute. 3. Add the stock or water and bring to a boil. Then, add the lentils and bring to a boil again. 4. Reduce the heat to low, cover the pot, and cook for 30 minutes, mixing occasionally. 5. Blend and bring back to the pot. Add ½ cup of water or stock and salt, to taste. Serve with fresh, chopped parsley, a drizzle of extra virgin olive oil, sour cream, or plain Greek yogurt.
