I was craving a burnt Basque cheesecake but I wanted that crème brûlée crunch…so what did I do? I made this delight! Burnt Basque Brulé cheesecake    •   Butter (for the tin)    •   800g soft cheese    •   255g caster sugar    •   2 tbsp plain flour    •   200g soured cream    •   4 medium eggs    •   2 tsp vanilla extract    •   100g Demerara sugar Preheat the oven to 240°C (220°C fan) and butter a deep cake tin. Line it with baking parchment. Beat the soft cheese and caster sugar until smooth, then mix in the flour, soured cream, eggs and vanilla. Pour into the tin, tap out air bubbles, and bake for 30 minutes until it’s caramelised on top and wobbly in the middle. Let it cool completely. Sprinkle the. Demerara sugar on top use more or less as needed. Using a blow torch makes small circular movements until the top is all crispy and golden.
