·2022-11-16Slowcooker Creamy Chicken & Potato Soup A hearty filling soup with soft potatoes, shredded chicken and veg in a creamy chicken broth. A throw and go simple one! Serves 6 337 Calories Ingredients: - 3 chicken breasts - 2-3 celery sticks, chopped - 2-3 carrots, chopped - 1 onion, chopped - 6 Maris piper potatoes, peeled and cubed - Handful of fresh thyme - 1 tsp dried rosemary - 1 tsp dried parsley - 1 bay leaf - 3 garlic cloves - Salt and pepper - 1L chicken stock - 100ml double cream - Fresh chives, to garnish - 6 cooked chopped bacon rashers, to garnish (optional) Method: 1. Chop your vegetables into small cubes and pop into the slowcooker with all the ingredients above apart from the cream, chives and bacon 2. Cook on low for 8 hours or high for 4 hours. Then slightly mash some of the potatoes in the pot so it thickens the soup (Add cornflour if you want it thicker) 3. ·5h ago Air Fryer Cheeseburger Bowl 🍔 Serves 3 494 Calories If you’re craving a burger but want abetter version, here is one of my go-to meals I prepare. Crispy cubed potatoes in the airfryer with a cheeseburger topping! Ingredients: 600g golden baby potatoes 500g lean beef mince (I used 5% fat) 50ml beef stock 1 tbsp tomato purée 1 tsp mustard 1 tbsp paprika 100g reduced fat cheese Iceburg lettuce, sliced 8 cherry tomatoes, diced 30g crinkle cut gherkins For the sauce: 3x tbsp light mayo 1 tbsp tomato ketchup (less sugar & salt) 1 tsp mustard 1 tsp garlic puree Dash of gherkin juice Method: 1. Chop your potatoes into small cubes and pop into a bowl with some oil, cajun, salt, pepper and give it a good mix. Airfry for 20 minutes at 200.
2. While that is cooking prepare your mince by cooking it in a man (medium heat) with some oil, salt, pepper and cajun. When its starting to brown add 1 heaped tablespoon of tomato puree with 1 tsp of mustard and 50ml beef stock. Give it a good mix until fully cooked.
3. Prepare your burger sauce by mixing the ingredients above in a small bowl
4. I’m always waiting for a table at Nando’s for at least 45 mins, Deliveroo is even worse maybe it’s just Belfast 😅anyway.. Ps I have an Airfryer cookbook Recipe - Coat 2 flattened chicken breasts in 3 tbsp of your favourite Nando’s sauce - Coat 4-5 halloumi slices in 1 tbsp of the sauce - Add garlic butter to your ciabatta rolls 1. Add chicken to the airfryer for 10 mins at 200 2. After 10 mins add the halloumi for 3 mins 3. After a total of 13 mins so 10 for the chicken and 3 for halloumi add your bread roll for 2 minutes and everything’s ready together 😁 4. Top the ciabatta roll with lettuce, sweet mayo, your chicken and halloumi. To your Slowcooker add - 3 x chicken breasts - 100g cooked chorizo - 2 tbsp pesto I used sundried tomato 🍅 - Handful of sundried tomatoes - 5 x sliced garlic cloves - 150ml of chicken stock - Tsp basil 🍃 2. Cook on high for 2.5 hours then add 350g dry penne pasta 🍝 with 500ml of chicken stock. - Cook again on high for 45 minutes, if you can stir after 30 minutes do so. 3. Stir in 250ml of double cream or soft cheese & spinach The spinach will wilt really quickly, then pop in your bowls and top with Parmesan if you want. Ingredients - 400g of chicken thigh - 6-7 tbsp dark soy sauce (reduced salt) - 7 tbsp honey - 1 tbsp cornflour / tbsp water - Garlic 🧄 (lots) - 4 tbsp sriracha 🌶️ - 100ml of chicken 🍗 - 200g of noodles - 1 tbsp of hoisin 🥄 - 1 tbsp ginger How to? 1. Add everything to the slowcooker for 4-5 hours on high or 7-8 on low, stir chicken and slightly break it up 2. Toss in cooked noodles and spring onions 3. For a full book of macro counted slowcooker recipes, Six Ingredient Slowcooker is £10 and OUT NOW 📕 Serves: 5 Ingredients - 400g lean beef mince - 700g passata - 1 tbsp tomato purée - 3 garlic cloves, grated or chopped - Handful of fresh coriander, chopped, plus extra to garnish - 1 red chilli, sliced - 1 onion, chopped - 1 packet of chilli con carne spice mix (or you can make your own) - 700ml chicken stock - 400g tin of kidney beans, drained and rinsed - 1 red pepper, chopped - 250g dried macaroni - 120g Cheddar cheese (reduced fat if you can), grated Salt and pepper, to taste Method 1. Ideally brown the mince but if not, Add the beef mince, passata, tomato purée, garlic, half the coriander, the chilli, onion, chilli con carne spice mix and salt and pepper to the slow cooker. Cook on high for 4 hours or low for 7-8 hours. 2. Add the stock, kidney beans, red pepper and macaroni and cook on high for a further 45 minutes. If cooking on low, you’ll need to leave it for closer to 1 hour to cook the pasta. 3. I’m so so grateful for all of your support in 2024, hope you enjoy the pie and have a Merry Christmas 💙 Ingredients: - 800g beef steak or rump (or 1kg brisket), chopped - 440ml can of Guinness - 200ml beef stock - 1 tbsp tomato purée - 1 tsp dried rosemary - 1 tsp dried thyme - 1 tsp dried oregano - 1 bay leaf - 1 tbsp brown sugar (Optional) - 2 carrots, roughly chopped - 1 red onion, chopped - 1 celery stick, chopped - 1-2 heaped tbsp cornflour or gravy powder - 3 garlic cloves, crushed - 1 sheet of ready-rolled shortcrust pastry - 1 egg, beaten, to glaze the pastry - salt and pepper, to taste Method: 1. Throw all the ingredients, except the pastry and egg, in the slow cooker. 2. Cook on high for 4 hours or low for 7-8 hours. Discard the bay leaf. 3. Preheat the oven to 200°C. Top the beef filling with the pastry using the slowcooker lid to measure & cut round, tuck it round the pie, then brush with the beaten egg. Pop the ovenproof slow-cooker pot (without the lid) into the oven for 20/25 minutes until golden and crisp. ·2024-12-19Air Fryer Mushroom & Philly Crostinis AD Here’s a simple canapé to make this Christmas 🎄 They’re made with @philadelphia_uki for a nice, creamy taste and are absolutely DIVINE. Ingredients: 1 sourdough baguette, cut into thin slices 250g chestnut mushrooms, thinly sliced 1-2 tbsp olive oil 1-2 tbsp balsamic vinegar 1-2 tablespoons unsalted butter Salt and pepper Handful of fresh thyme Handful of fresh chives 2-3 garlic cloves, minced 1 tbsp balsamic vinegar 80g Philadelphia Method: 1. Slice the bread into 1-2cm slices then drizzle in oil and air fry for 7 minutes at 200 2. Add some butter to a pan on medium heat, along with your fresh thyme, garlic, salt and pepper. Give it a good mix then add your mushrooms. 3. Simmer then addyour balsamic vinegar and cook until sauteed. 4. Ingredients: - Sourdough baguette - 50g low fat butter - 4 garlic cloves, crushed - Handful of fresh parsley - Handful of cooked bacon bits - 2 tbsp honey - 100g brie, sliced - 50g hot honey, to serve - Salt and pepper Method: 1. Slice your sourdough (I cut about 8 slices into ½ baguette) 2. Prepare your butter by mixing your butter, honey, garlic, parsley and bacon bits, salt and pepper 3. Spread the garlic butter mixture into each slice and then top with some brie 4. Air fry at 190 for 8 minutes and serve with some hot honey

My new Slowcooker book Six Ingredient Slowcooker is out now, half price and £10, so go change your meals and grab it 📕 Sponge - 200g of pitted dates steeped in 150ml of boiling water - 100g of unsalted butter - 3-4 tbsp of treacle - 200g of self raising flour - 170g dark muscavdo sugar - 1 tsp bicarbonate - 2 eggs - 1 tsp vanilla (optional) Sticky Toffee Sauce - 100g of dark muscavado sugar - 100g butter - 170ml of double cream 1. Steep the dates in boiling water for 30 mins then mash with a fork 2. Mix together your butter and sugar 3. Add to a bowl with the remaining sponge ingredients 4. Add to a greased slow cooker and cook on high for 2-2.5 hours or 5-7 on low. 5. Use anything you have of course but below is what I used. Ingredients: - 2 slices of sourdough bread - 1 tbsp cranberry sauce - Generous spreadings of butter - 1 handful of Stuffing - Leftover turkey & ham - Cheddar slices optional Method 1. Assemble the sandwich 2. Coat all sides of the bread in butter 3. Fill the sandwich and airfry for 8 mins at 180 4.
