Ingredients
- 500g (1.1 lbs) beef sirloin, sliced into finger-sized strips
- 3 tbsp finely chopped spring onion greens
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sugar
- 4 cloves garlic, finely grated
- 1 bunch spring onions, white ends kept whole, same length as the beef
- 3 carrots, cut into batons (same size as the beef and onions)
- 1 cup flour
- 4 eggs, beaten
- 3 tbsp peanut oil for frying
- 2 tbsp soy sauce (for the dipping sauce)
- 1 tbsp rice wine vinegar
- 1 tsp toasted sesame seeds
Method
1. Begin by marinating the beef. In a bowl, combine the beef, finely chopped spring onion greens, 2 tablespoons soy sauce, sesame oil, and sugar. Mix well and let it marinate.
2. Assemble the skewers using wooden sticks. Start with 1 piece of spring onion, followed by a piece of carrot, and then a piece of beef. Repeat the sequence so you have 2 pieces of each ingredient on each skewer. Set aside.
3. Prepare the dipping sauce by mixing 2 tablespoons soy sauce, 1 tablespoon rice wine vinegar, and 1 teaspoon toasted sesame seeds in a small bowl.
4. To cook the Pasanjeok, heat a large cast-iron pan over medium-high heat and add 1 tablespoon of peanut oil. Lightly season the skewers with salt, then coat them in flour, followed by dipping them into the beaten eggs.
5. Once coated in egg, place them in the hot frying pan. Fry for about 3-4 minutes on each side or until golden and cooked through.
6. Once cooked, remove the skewers from the pan and serve with the prepared dipping sauce.

Start by making the dough. In a mixing bowl place the flour and salt. Make a well in the centre and pour in the water. 2. Mix until it comes together and you have a shaggy dough. Then turn it out and knead for 6-7 minutes or until you have a smooth dough. 3. Cut into 4 pieces and roll into rounds. 4. Pour 0.5 tsp of oil into a bowl and place the dough ball into it, cover and let rest for 1 hour. 5. When ready, place a large pot of salted water on to boil, and the remainder of the oil in a small pot to heat. 6. Working with one dough ball at a time, flatten it out then make a divot in the centre with a chopstick. Then grab each end and pull to stretch it. Once you have pulled it to around 1 metre, tear the strip in half. 7. Place the pulled noodles into the boiling water and cook for 3-4 minutes. 8. Place the garlic, spring onions, chilli, cumin and Szechuan peppercorns into your bowl. 9. Carefully pour the hot oil over the spices and veg in the bowl before adding in the cooked and drained noodles. In a large container, combine three-quarters of the thyme, orange peel, one sliced carrot, crushed garlic, and half of the onion (cut into quarters) 2. Push the cloves into the remaining half of the onion and add it to the container 3. Add the diced beef 4. Pour over the red wine, cover, and refrigerate for 24 hours 5. Preheat the oven to 160°C (320°F) 6. Remove the beef from the fridge and drain off the wine, reserving it for later 7. Remove all the aromatics except for the studded onion. Pat the beef dry with a paper towel 8. Heat a large, heavy-based pan over high heat. Add the beef tallow and sear the beef in batches until browned on all sides 9. Transfer the beef to an oven-safe pot along with the studded onion 10. In the same pan, add the tomato purée and cook for a minute. Pour in the beef stock, stir well, and bring to a simmer 11. Pour the reserved red wine over the beef in the pot, then add the remaining thyme and fresh oregano 12. Add the hot beef stock and tomato purée mixture to the pot and bring to a light simmer 13. In a separate pan, cook the diced bacon until golden, then add it to the beef pot 14. Cover the pot and place it in the preheated oven for 2½ to 3 hours, checking after 1½ hours 15. After about 2 hours, remove the pot from the oven and discard the studded onion and herbs 16. Add the peeled shallots and the remaining two carrots (peeled and barrel-cut) 17.
