Toffee Basque Burnt Cheesecake🥂
This cheesecake is rather simple to make and it is super creamy. As my husband said on his birthday what is this, give me more! Full recipe below.
Ingredients:
Cheesecake:
* 3, 8 oz packages cream cheese, room temp
* 1 cup granulated sugar
* 3 eggs, room temp
* 1 1/2 tsp vanilla extract
* 1 1/2 cup heavy cream
* 1/4 cup flour
* 1/2 tsp kosher salt
Toffee Sauce:
* 8 tbsp unsalted butter
* 3/4 cup brown sugar
* 1/2 cup heavy whipping cream
* 1 tsp vanilla extract
Directions:
* Preheat oven to 400° F. Do this 15 min prior to prepping all the ingredient’s.
* Lightly grease an 8” inch springform pan and line with two sheets of parchment paper, hanging over the sides of the pan.
* In a mixing bowl beat together cream cheese and sugar for about 6 min.
* Combine eggs and vanilla extract into a bowl and beat in one egg at a time on medium speed for 1-2 min, till fully incorporated.
* Add in heavy cream and beat on medium speed for about 1 min, till fully combined.
* Combine flour and salt and sift into mixture. Beat on low speed for no more than 1 min. Using a spatula fold the batter and scrape down sides. Do not over mix.
* Pour into prepared dish and bake for about 45 mins. Check if top is a deep golden brown. Top should be burnt (caramelized). Mine took 52 min, but I suggest turning on your oven light at 45 min to check the status. Try not to open the oven door while baking.
* The cheesecake will jiggle and it will bubble up once it’s ready. As the cheesecake cools it will shrink in size and sink in.
* Cool on counter for 1-2 hours till room temp. Transfer cheesecake to fridge for up to 3 hrs. I like eating mine at room temp. I sliced it after 1 hr in the fridge. You can also leave it in the fridge overnight. Take it out 30 minutes prior to serving.
* Make toffee sauce before serving. Melt butter in saucepan. Add in brown sugar till it is combined. Reduce heat and add in heavy cream and vanilla extract. Stir till thickens. Drizzle over cheesecake.

Peach Please 🍑 Peach Crumb Cheesecake😋 Crust: * 2 cups graham cracker crumbs * 1/8 cup light brown sugar * 1/2 tsp cinnamon * 6 tbsp unsalted butter, melted Peaches: * X 2, 1lb bags of defrosted frozen peaches * 1 tbsp lemon juice * 1/4 cup light or dark brown sugar * 1/4 cup granulated sugar * 2 tsp of cornstarch Crumb: * 8 tbsp unsalted butter, melted * 1 1/3 cup flour * 1/2 cup light brown sugar * 1/4 cup granulated sugar * 1 1/2 tsp cinnamon Cheesecake Filling: * 24 oz. Cream cheese, softened * 1 cup granulated sugar * 1 1/2 tsp flour * 3 large eggs, room temp * 3/4 cup sour cream * 2 tsp vanilla extract Directions: 1. Preheat oven to 350° F. Line and grease bottom and sides of a 8” springform. 2. Combine graham cracker crumbs, brown sugar, cinnamon and melted butter. Press crust down and up the sides of pan. Bake for 10 min, set aside. Turn oven to 325°F. 3. In a bowl add lemon juice, sugars, cinnamon and cornstarch to peaches. Mix together, cover, set aside. 4. Make crumb: combine melted butter, flour, sugars, and cinnamon. Set aside. 5. Make cheesecake filling: beat cream cheese till smooth. Add in sugar. Add in flour. Add in eggs one at a time and mix on low speed till just incorporated. On low speed add in sour cream and vanilla extract, till combine. 6. Fill pan with a little less than half of the cheesecake filling. Scoop 1/4 of the peach’s on top of filling. Add 1/4 of crumb on top. Add another 1/4 of peaches on top of crumb. Add remaining cheesecake filling. Sprinkle half of the crumb on top. You should have some peaches and crumb left, set in fridge. 7. Cover sides and bottom of springform pan with tinfoil. Place springform pan in roasting pan filled halfway with hot water. 8. Bake for 90 min. Once baked crack oven open for 30 min to let cheesecake rest. Remove cheesecake from oven/water bath, put on a cooling rack for 30 min. Transfer to fridge for 6hrs/overnight. 9. Take cheesecake out of the fridge 30 min prior to adding topping. I consider them the best breakfast treat! They are super soft and every bite is better than the next. Full recipe below. Dough: * 1 cup warm milk (110°F) * 2 1/2 tsp active dry yeast, 1 package * 2 large eggs, room temp * 8 tbsp unsalted butter, melted * 1/2 cup granulated sugar * 2 lemons, zested * 3 1/2 cup all-purpose flour * 1 tsp salt Filling: * 5 tbsp unsalted butter, melted * 3/4 cup sugar * 1 lemon, zested * Optional, 1/3 cup heavy cream (top of rolls) Icing: * 1 cup powder sugar * 2 tsp fresh lemon juice * 3 tbsp milk Directions: * In a small bowl, microwave milk to 110° F, 60 seconds. * Place warm milk and yeast into standin mixer bowl fitted with paddle and let it sit for 10 minutes. * Pour eggs, melted butter, sugar and lemon zest into the mixture and beat just till combine. Slowly add flour and salt mixture, 1 cup at a time till incorporated. Let it sit for 5 minutes. Change paddle to dough hook and beat for 8 minutes. * Transfer dough to a greased bowl and cover it with a towel. Let dough rise for 90-120 minutes in a warm place. * When dough is almost done rising make filling by combining melted butter, sugar and lemon zest together. Save a tsp of lemon zest for your icing. * Punch down dough. Roll out dough into a rectangular shape and spread filling on top of dough. * Roll the dough into a log shape and slice into large rolls. Makes 8-12 rolls, depending how big you want them! * Preheat oven to 375° F. Place rolls into a greased deep baking dish (I use 9x13 dish). Pour heavy cream over rolls. ·1d ago Almond Croissant Snack Cake 😋🥐 Hey y’all! I have been craving almond croissants lately but this almond croissant snack cake is much easier to whip up than making a homemade croissant. Full recipe below! Cake: * 4.5 oz almond paste (a little more then half of 7 oz tube) * 1/2 cup sugar * 8 tbsp unsalted butter, softened * 3 eggs * 1 tsp almond extract * 1/2 cup all purpose flour or almond flour * 1 tsp baking powder * 1/2 tsp salt Topping * 2/3 sliced almonds * 2 1/2 tbsp sugar * Powder sugar for dusting Instructions: * I use a food processor for this recipe but if you have to use a stand-in mixer I suggest grating the almond paste before making. * Preheat oven to 350°. Grease 8x8 square pan lined with parchment paper. Can also use a 8” round or springform pan. * Pulse pieces of almond paste and sugar for 3 minutes. Add in sliced butter and pulse for another 2 minutes. Add in eggs and extract and pulse for 2 minutes till combined. * Mix flour, baking powder and salt together. * Add in flour mixture and pulse for 3 minutes till combined. Scrape down sides with a spatula. * Pour into prepared baking dish. Smooth top out with spatula. * In a small bowl combine sliced almonds and sugar. Ingredients: Cookie: * 1 cup unsalted butter, melted * 1/2 cup granulated sugar * 1 1/4 cup packed brown sugar * 2 large eggs, room temp * 1 1/2 tsp pure vanilla extract * 3 cups all-purpose flour * 1 tsp baking soda * 1/2 tsp salt * 1 cup mini chocolate chips, separated Ganache: * 2, 4 oz, chocolate bars, chopped * 1/2 cup heavy cream, heated Instructions: * Preheat oven to 350°F. * Place melted butter in a medium bowl. Add both sugars and mix on low speed till smooth. Mix in eggs and vanilla extract till combine. Mix flour, baking soda and salt salt together and slowly mix in flour, 1/2 cup at a time. Line a large cookie sheet with parchment paper. * In a medium bowl beat together butter, sugar and lemon zest till smooth. * Squeeze both lemons that you zested and remove 1 1/2 tbsp of lemon juice and add to mixture. Add vanilla extract. Put aside remaining lemon juice. * Slowly add in dry ingredients and beat slowly till combined. Chill dough for 10 minutes. * Using a small or medium icecream scooper, scoop cookie dough and roll into balls. Donuts: * 1 cup milk, 110 degrees F * 2¼ tsp active dry yeast, 1 packet * 8 tbsp unsalted butter, melted * 1/4 cup granulated sugar * 1 tsp cinnamon * 1/2 tsp nutmeg * 1 tsp vanilla extract * 2 eggs + 1 egg yolk * 3 1/2 cup flour, extra for rolling * 1 tbsp oil for bowl * 6 cups vegetable oil for frying Topping & Filling: * 1 cup cinnamon sugar * 1/2 cup Nutella Instructions: 1. Combine lukewarm milk and yeast and let it sit for 10 minutes till it activates. 2. In a stand-in mixing bowl whisk together melted butter, sugar, cinnamon, nutmeg and vanilla extract. Mix in eggs. 3. Add in yeast mixture and continue to whisk on medium speed. 4. Switch mixer to dough hook. Add in flour. It’s a soft dough. Put in a greased oil bowl and cover with plastic wrap and a towel. Put dough in a warm place for 90 minutes to rise till it’s double in size. 5. Remove dough from bowl and roll out with rolling pin. Using a heart shape cookie cutter cut heart shape donuts and put on a parchment paper cookie sheet and let them rise for 30 more minutes, covered with a towel. 6. While dough is rising heat oil to 350°F. Fry donut two minutes on each side till golden brown. Sprinkle in cinnamon sugar and pipe Nutella in donut. Chocolate Ganache: * 1/2 cup chocolate chips * 1/4 cup heavy whipping cream Chocolate Cookies: * 1 1/2 cup all-purpose flour * 1/2 cup Dutch process cocoa powder * 1/2 tsp baking powder * 1/4 tsp salt * 1 1/2 stick unsalted butter, softened * 2/3 cup light brown sugar * 1/3 cup granulated sugar * 2 egg yolks, room temp * 1 tsp vanilla extract Frosting: * 2 sticks unsalted butter, softened * 3 cups powder sugar * 1/2 cup cocoa powder * 1 tsp vanilla extract * 3 tbsp heavy cream Directions: 1. Preheat oven to 350 degrees F. 2. First make chocolate ganache by warming up milk and combining it with the chocolate chips. Stir till smooth and put in fridge while making cookies. 3. Make cookies by combining flour, cocoa powder, baking powder and salt. Set aside. Combine butter, sugars and beat for a few minutes till fluffy. Add in egg yolks and vanilla extract. Add in dry ingredients and beat till cookie dough forms. 4. Take ganache out of the fridge and scoop into small balls (make 9 balls and save remaining of ganache to melt later to drizzle on top of cookies. Place ganache balls in freezer for 20 minutes. 5. Make cookie dough balls using ice cream scooper. This makes 9 large cookies. Press cavity down to place the ganache ball in the center and roll ball together. Bake for 10 minutes. 6. Take cookies out and make frosting while cookies cool. 7. Combine butter, powder sugar, cocoa powder, vanilla extract and heavy cream and beat till smooth. 8. Pipe frosting on cookie and drizzle with remaining ganache. Ingredients: Crumb: * 3/4 cup brown sugar * 1/2 cup cup all-purpose flour * 6 tbsp unsalted butter, melted Cake: * 2 cup all purpose flour * 1 1/2 tsp baking powder * 1/4 tsp salt * 8 tbsp unsalted butter, softened * 1 cup granulated sugar * 1 lemon, zested * 2 eggs, room temp * 1 1/2 tsp vanilla extract * 2/3 cup milk * 2 cup blueberries Lemon Icing: * 1 cup powdered sugar * 1/2 fresh lemon juiced * 1 tbsp heavy cream Directions: * Preheat oven to 350°F. Grease 8x8 square baking dish or you can use a 9” round springform pan. * Make crumb by combining all crumb ingredients together with a fork. Set aside. * Combine flour, baking powder and salt in a small bowl and set aside. * Beat butter and sugar till fluffy, about 2 minutes. * Add lemon zest, eggs and milk and beat till combine. * Add one cup at a time of flour mixture till combine. Batter will be thick. Fold in blueberries. * Place half batter in baking dish and smooth out. Sprinkle layer of crumb in center and add remaining batter and sprinkle remaining of crumb on top. * Bake for about 50-55 minutes if using a 8x8 baking dish. Line and grease a 8 to 9 inch spring form pan. Set aside. * Melt butter in microwave and let cool while you mix your dry ingredients. * In a medium bowl whisk together flour, cinnamon, ground ginger, ground cloves, nutmeg, salt and baking soda together. Set aside. * In a mixing bowl, on medium speed beat together brown sugar, melted cooled butter, molasses and vanilla extract. Add in egg and mix together. * On low speed add in flour mixture till combine. It will be slightly sticky! * Fold in chocolate chips and diced chewy caramel bites. * Scoop cookie dough into baking dish and press down evenly. * Bake for 20-25 minutes. Mine was fully baked at 20 minutes. There’s no food coloring needed and they’re easy to decorate. Full recipe below. Ingredients Cupcake: * 1 cup Flour * ½ cup unsweetened cocoa powder * 1 tsp baking soda * 1 egg, room temp * ½ cup buttermilk, room temp * ½ cup vegetable oil * 1 ½ tsp vanilla extract * 1 cup sugar * ½ cup hot water Chocolate Filling: * ½ cup chocolate chips, melted Christmas Tree & Frosting: * 12 sugar cones * 4- 4 ½ cups powdered sugar (extra for dusting) * 4 sticks (32 tbsp) of unsalted butter, room temp * 3 tbsp heavy cream * 2 tsp vanilla extract * Sprinkles of choice Directions * Preheat the oven to 325 degrees F. Prepare a cupcake pan with baking cups. * Combine flour, cocoa powder and baking soda and set aside. * Combine egg, milk, oil, and vanilla extract and whisk together. * Pour wet ingredients into dry ingredients and add in the sugar. Whisk together it will be thick. * Add hot water and continue to whisk. The batter will be loose. Pour batter into cupcake cups and bake for 20 minutes. * Remove from the oven and make the frosting while cupcakes cool on a cooling rack. * For frosting, beat butter till smooth and beat in remaining ingredients. Put about a quarter of the frosting in a piping bag with a round tip, and the remaining frosting in a piping bag with a smaller star tip.
Once frosting is completed, microwave chocolate for 45 seconds and stir, till melted. Pour into a piping bag. * Pipe chocolate in the center of the cupcake. Frost cupcakes with a base of vanilla. * Put a sugar cone on top of the cupcake and pipe stars working your way from the bottom of the cone to the top. Add sprinkles and dust with powdered sugar for snow. Printable Recipe: https://sweetmonkey.blog/hot-chocolate-crinkle-cookie-cup/ Cookie: * 1 stick Unsalted butter melted and cooled * 1 cup light brown sugar * ¼ cup granulated sugar * 1 tsp vanilla extract * 2 eggs, room temp * 1 ⅓ cup flour * ¼ tsp Baking powder * ¼ tsp Baking soda * ½ cup cocoa powder * 1/4 tsp salt Ganache: * 1 1/2 cup chocolate chips * 3/4 cup heavy cream Marshmallow fluff: * 4 eggs whites * 3/4 cup sugar * 1/4 tsp cream of tartar * 1 tsp vanilla extract Topping: * Festive sprinkles * 12 Mini candy canes Directions: * Preheat oven to 350 degrees F. * In a medium bowl mix melted butter, sugars, vanilla extract and eggs. * In a medium bowl mix together flour, baking powder, baking soda, salt and cocoa powder. Mix dry ingredients into wet ingredients with a spatula till combined. Using a cookie scoop, scoop dough into a a greased 12 cup muffin pan. Press a cavity down with the back of the scooper. Bake for 15-18 minutes. Re-press down cavity of the cookie once removed from the oven. Let cool. * While cookies are cooling make ganache by pouring heated heavy cream over chocolate chips and stir. Place in piping bag and set aside. * Make marshmallow frosting: put 4 eggs whites in a mixing bowl, add sugar and cream tartar and stir for 2 minutes. Start a double boiler with about an inch of water and let simmer. Take bowl and place on your double boiler and stir constantly till mixture is at 160 degrees F. Beat mixture till stiff peaks form, about 3-5 minutes, add in vanilla extract and beat for another 2 minutes. Put in piping bag. * Take cooled cookie cups and pipe ganache in center and pipe marshmallow frosting on top. Carrot Cake: * 2 cups all-purpose flour * 2 tsp baking soda * 2 tsp cinnamon * 1/2 tsp salt * 1 cup granulated sugar * 1 cup dark brown sugar * 1 1/4 cup vegetable oil * 1 1/2 tsp vanilla extract * 4 eggs, room temp * 3 cup carrots shredded * 1/2 cup chopped pecans No Bake Cheesecake Filling: * 2, 8 oz. blocks cream cheese, softened * 1 tbsp cinnamon * 1 cup powder sugar * 1 tsp vanilla extract * 1 1/4 cup heavy whipping cream Cream Cheese Frosting: * 16 oz. cream cheese, softened * 8 tbsp unsalted butter, softened * 4 cup powder sugar * 1 1/2 tsp vanilla extract * 2 tbsp heavy cream Instructions: 1. Carrot Cake: Preheat oven to 350° F. Grease a 9” spring form pan and a 9” round baking dish, lined with parchment paper. Combine dry ingredients in a bowl, set aside. Whisk sugars and oil together. Add extract and eggs, and combined. Fold in flour mixture a little at a time. Mix in carrots and pecans. Pour half of batter in each prepared baking dish. Bake for 35 min. Take out to cool. For cake in the springform pan press down slightly for flat top. 2. Cheesecake: beat cream cheese and cinnamon till smooth. Add in powder sugar, beat till smooth. Add in extract and combine. Put mix in a small bowl. Using other bowl whip heavy cream till soft peaks form. Fold into cheesecake mixture. 3. Crumble cake in the regular 9” pan with a fork. Add about 1/2 cup to cream cheese mixture once cooled. Fold together. 4. Place a thin layer of cheesecake filling on top of crust. Layer a thick layer of carrot cake crumbs and layer remaining cheesecake mixture, smooth out with spatula. Take carrot cake crumbs and put in plastic bag. Let cake set for 6 hrs in fridge. 5. Make frosting by beating cream cheese and butter till smooth. Add in powder sugar, extract + heavy cream. Frost layer on top of cake. Ingredients: * 1 cup unsalted butter, melted * 1/2 cup granulated sugar * 1 1/4 cup packed brown sugar * 2 large eggs, room temp * 1 1/2 tsp pure vanilla extract * 3 cups all-purpose flour * 1 tsp baking soda * 1/2 tsp salt * 3/4 cup chocolate chips Cannoli Frosting: * 1 1/2 cup whole milk ricotta cheese, strained * 8 oz mascarpone cheese * 1 cup powdered sugar * 1 tsp vanilla extract * 3/4 cup mini chocolate chips, plus additional mini chocolate chips for topping Optional: chocolate drizzle (melt a 4 oz. Chocolate bar) Instructions: * Preheat oven to 350°F. * Place melted butter in a medium bowl. Add both sugars and mix on low speed till smooth. Mix in eggs and vanilla extract till combine. * Mix flour, baking soda and salt salt together and slowly mix in flour, 1/2 cup at a time. Mix in chocolate chips. * Spray muffin pans with baking spray. Scoop cookie dough into muffin pan using a medium ice-cream scooper and press down a cavity in the center of the cookie. Bake for 16-20 minutes. * While baking make cannoli frosting by combining ricotta, mascarpone, vanilla extract, powder sugar and mini chocolate chips. Dough: * 1 cup warm milk (110°F) * 2 1/2 tsp active dry yeast, 1 package * 2 large eggs, room temp * 5 tbsp unsalted butter, melted * 1 tsp vanilla extract * 1/2 cup granulated sugar * 4 cup all-purpose flour * 1 tsp salt Filling: * 6 tbsp unsalted butter, softened * 1/2 cup dark brown sugar * 2 tbsp unsweetened cocoa powder * 1/2 tbsp cinnamon * 1/2 tsp pure vanilla extract * 4 oz. Semi Sweet Chocolate Bar, chopped Topping & Glaze: * 1 package of espresso (.09 oz) + 1/2 cup hot water, combine * 1/2 cup heavy cream * 1 1/4 cup powder sugar * 1/2 tbsp cocoa powder Optional chocolate drizzle Directions: * In a small bowl microwave milk to 110° F, 60 seconds. * Place warm milk and yeast into standin mixer bowl fitted with paddle and let it sit for 10 minutes. * Pour eggs, melted butter, sugar, vanilla extract into the mixture and beat just till combine. Slowly add flour and salt mixture, 1 cup at a time till incorporated. Let it sit for 5 minutes. Change paddle to dough hook and beat for 8 minutes. * Transfer dough to a greased bowl and cover it with a towel. Let dough rise for 90 minutes in a warm place. * While dough rises make filling by combining all ingredients except the chopped chocolate. * Punch down dough. Roll out dough into a rectangular shape and spread filling on top of dough. Sprinkle chopped chocolate, save a handful for later. * Roll the dough into a log shape and slice into large rolls. Makes 9 large rolls. * Preheat oven to 375° F. Place rolls into a greased 9” to 10” skillet. * Make espresso milk bath. Put espresso mixture into heavy cream and stir. Pour about half of the milk bath over the rolls. * Bake for 22-25 minutes. * Make glaze by taking remaining espresso milk and combine with powder sugar and cocoa powder.
